I used to do this in my childhood, just using popsicle molds instead of soda bottles and putting them in the freezer for some hours and voila, you have Coke frozen popsicles.

That's salt water, the purpose is to lower the ice freezing point, therefore it can absorb the heat from the liquid inside the bottle. You don't consume the salt water. This method is also used in traditional ice cream making.

Ice + salt = more deeper temperature than ice only. It is easy chemistry. If you want to solve salt, you need very much (thermo)-energy. This Energy comes from the ice. The ice is -20 celcius degrees. = The mixture of ice and salt becomes more colder than -20 degrees. You can test this at home! If you want to cool something extremely fast below, so add salt to the ice.
