  • This recipe introduces a delightful and nutritious bread crafted from chickpea flour. Gluten-free, sugar-free, and free from eggs and dairy, as well as yeast-free, it stands as an ideal choice for vegans. Chickpea flour bread is rich in protein, dietary fiber, minerals, and antioxidants. Supporting bone, blood, and muscle health while promoting normal digestion, it serves as a source of beneficial fats. Regular consumption can contribute to overall well-being.
    Recipe
    Ingredients:
    ⚪️300g chickpea flour
    ⚪️25g psyllium
    ⚪️1/2 teaspoon salt
    ⚪️1 teaspoon coriander
    ⚪️1/4 teaspoon cardamom
    ⚪️1 teaspoon baking soda
    ⚪️1 tablespoon lemon juice
    ⚪️350ml water
    ⚪️For garnish : sesame seeds, sunflower seeds, cumin
    Instructions:
    1️⃣In a deep bowl, sift chickpea flour and add psyllium, salt, coriander, and cardamom.
    ~Dissolve 1 teaspoon of baking soda in lemon juice.
    ~Pour water and mix thoroughly for 5-8 minutes until a homogeneous dough is formed.
    2️⃣Prepare a baking sheet lined with parchment paper or a silicone mat.
    ~Transfer the dough onto the prepared baking sheet. Moisten your hands with water and shape the dough into a loaf.
    ~Sprinkle the loaf with sesame seeds, sunflower seeds, and cumin.
    ~Use a knife to make cuts on the surface of the dough.
    3️⃣Bake in a preheated oven at 170°C (338°F) for 70 minutes.
    ~After baking, cool the bread on a rack before slicing.
    This chickpea flour bread will be an excellent addition to your table. Enjoy your meal!

    I have just made this exactly to the video recipe and it is absolutely fantastic. The down side is that me and my husband ate the whole loaf in a very short space of time so I'm going to have to make another one. Great instructions, great video.

    Looks great! Love this is plant-based as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy and choline and lead in eggs. Thanks for sharing

    Wow! I just made a loaf and it turned out fantastic. Not as browned as yours though. Maybe I need to cook it longer than the 70 minutes?

      ~300g chickpea flour is approximately 3 ½ cups
      ~25g psyllium ≈ approximately 3 tablespoons
      ~1/2 teaspoon salt
      ~1 teaspoon coriander
      ~1/4 teaspoon cardamom
      ~1 teaspoon baking soda
      ~1 tablespoon lemon juice
      ~350ml water ≈ approximately 1 ½ cups

      Thank you for your question! In this particular recipe, substituting psyllium may not achieve the exact same result. Psyllium lends a pliable texture to the dough and aids in the bread's rise during baking, as well as providing a more moist texture. I've experimented with ground chia seeds and ground flaxseeds as substitutes, but found that the dough is less pliable and doesn't rise as much compared to when psyllium is used. As a result, I had to resort to using molds in this case. However, when using ground flaxseeds, although the bread may not rise as much, its taste remains excellent and comparable to psyllium-based bread. You may need to increase the amount of ground flaxseeds slightly, around 45 grams, and monitor the baking time closely to prevent over-baking due to the texture. Additionally, when using ground flaxseeds, you can add 2 tablespoons of olive oil for a moister consistency.

    Hi there. I followed your recipe exactly however I found it tasted too strongly of baking soda(soda bicarb). Can I use baking powder if I leave out the lemon juice?

    habe es in eine runde silikonform gegeben, da etwas zu flüssig. leider sehr blass, trotz 5 minuten mehr und hat leider einen leicht unangenehmen nachgeschmack. hab ich was falsch gemacht?
