Craig's Cowboy Breakfast Bake | Easy Sausage Hashbrown Casserole

  • Want to make a delicious hashbrown breakfast casserole? *FULL RECIPE IN DESCRIPTION* This one will not disappoint. It can even be made the night before and stored in the refrigerator to quickly cook in the morning. This is even a favorite at our house for dinner.

    Craig's Cowboy Breakfast Bake:
    Ingredients:
    1 package (32 ounces) frozen cubed hash brown potatoes (960 g)
    1 Tablespoon (heaping) dehydrated minced onion (15 g)
    1 pound roll breakfast sausage, cooked and crumbled (480 g)
    2 cup shredded cheddar cheese (divided) (226 g)
    8 large eggs (or 2 cups eggbeaters) (480 ml)
    2 cups milk (480 ml)
    1 teaspoon salt (5 g)
    Directions:
    Step 1: Cook sausage in medium skillet and drain. Set aside.
    Step 2: Preheat oven to 350 degrees. Spray a 13 X 9 baking dish with cooking spray.
    Step 3: In a large mixing bowl, combine the hash browns, cheese, onion, and cooked, crumbled sausage. Put mixture in prepared baking dish. In another mixing bowl, combine eggs, milk, and salt. Pour over hash brown mixture.
    Step 3: Bake, uncovered, at 350 degrees for 45 - 50 minutes. Remove from oven and cover with remaining cheese. Place back in oven and cook for additional 5 minutes.

    Something that really elevates this dish is to bake your hashbrowns separately in the oven to get them crisp. You can do this while you’re cooking your sausage.

    Yum - so easy. Looking forward to trying this recipe. Thanks. I think I'll also add one of those small cans of chopped green chilies for a little kick. Just found your videos and like how you show easy recipes and give excellent instructions on how to make them. We need some more videos; there great.

    I agree music doesn't do justice Craig why don't you chop up some roasted long green ( Anaheim Chili ) really would up the flavor Now that's Cowboy Flavor from the south west.

    I just made this. I ended up putting it back in the oven for a total of 55 minutes and it was still very runny. I cold have poured the liquid out of the dish.

      Oh no! It shouldn’t be that runny. The eggs should have baked and gotten it to set. You may want to try less liquid. Let me know if that works. Thanks for watching! 😊
