the chef said it was over cooked. so that doesn't make much sense.
No, it still doesn't. He used the word "only" which implies that the scallops were under cooked. It would of only made sense if he phrased it in a way where 43% was too much. Got it?

A lot of people who consider themselves vegetarians or vegans (like me) will eat some seafood, especially the ones without brains like scallops or clams. You'll notice there's no dairy in the dish, could very well be on purpose as per Ben's diet.
Ron Swanson said fish are just the vegetables of the sea.
