Cantonese Salted Egg Steamed Pork Patty | Wally Cooks Everything

  • This tasty Cantonese ground pork recipe flavored with salted egg is one of my favorite easy homestyle dish I grew up eating. It really is so easy to prepare. You can put it together in the morning. And chuck it in the fridge all day until you get back from work. Cook up some vegetables and steam some rice and you've made yourself a terrific classic Cantonese dish!

    INGREDIENTS:
    300g Ground Pork
    1 Salt Egg (could be duck or chicken egg)
    2 Teaspoons Oyster Sauce
    1 Teaspoon Light Soy Sauce
    1/4 Teaspoon Ground White Pepper2 Teaspoons Cornstarch
    2 Teaspoons Oil
    Fresh Ginger Cut into Small Matchsticks
    2 Teaspoons Chopped Spring Onions
    1 Teaspoon Pure Sesame Oil
    RECIPE:
    Separate salted egg white and yolk.
    In a medium sized mixing bowl add together ground pork, oyster sauce, light soy sauce and ground white pepper. Mix well for a minute.
    Then add egg white and mix well for another minute.
    Add cornstarch mix well for a minute. Finally add cooking oil and mix well for another minute.
    Place ground pork into a shallow plate with a rim and form into a patty. Making sure it is evenly spread out. Cut egg yolk in half. Dice up one half into small bite sized chunks.
    Spread diced egg yolks around the patty and place half egg yolk in center.
    Place cut ginger around and get a large pot of hot water steaming.
    Steam for 8 to 10 minutes on high heat.
    When it's done sprinkle on chopped spring onions. Followed by a drizzle of some pure sesame oil on top.
    Cook up some vegetables too. I usually make leafy green vegetables. Then enjoy it all together with hot steamed rice!

    This is among one of the easiest dishes to make since it's a meatloaf of sorts, since it's just another form of meatloaf; only that this is cooked in a steamer or on top of a rice cooker. This kind of meatloaf is also great for working families, especially the households that have two working spouses; which is a necessity to support the household as it can be prepared first thing in the morning or the night before; great for weeknights too.

    Enjoyed this Wally. I make a similar style. I've never used ginger matchsticks but it sounds like a nice complimentary taste. I haven't used the salted duck eggs either but what a great addition. I make mine using Harm Ha (Fermented Shrimp Paste), Salted Turnips diced, diced pickled Daikon, I also use two eggs and corn starch mixed in. When I steam it I put a dent in the middle and what happens is I get a nice egg custard that's excellent with rice too.

    Hi Wally. Great recipe. I know there are different ways of making this dish. Are you sure 7-8 mins at high heat will cook the pork thoroughly?
    Just wondering.

      Hello 😃 My burner throws a lot of heat. You can always check yours. As long as it’s not pink it’s fine 👍

      Thanks Wally. I will make sure my burner is steaming hot. I noticed the pork patty is thin. Maybe that's why it cooked fast. I made this in the past but the meat was overcooked. I steamed for over 15 mins.
      I will try your method.
