2 cups grated cassava or 1 package (16 oz) frozen grated cassava
1 cup sugar
1 3/4 cups water
1/8 tsp pandan essence
1 tsp lye water (lihiya)
Fresh grated coconut for topping or sweetened coconut flakes

No you can't kasi lye water will make it chewy. You can make your own, I've seen recipes online but I am not sure if they are as equally effective.

Cassava talaga ang pichi-pichi. I don't tapioca flour will work.
Hi po im about to make pichi pichi. Live here in CA din po. Tanong ko lang of yung coconut mo for tapping yun po ba yung fresh?
I used sweetened grated coconut na nabibili sa target or walmert pero you can also use frozen grated coconut na nabibili sa Seafood City. Thaw mo lang sya.

Mam how to do lye water or any substitute
Lye water is needed to make chewy or gelatinous. I have seen homemade lye water online but I don't know if that works.

I haven't tried what the taste will be like kung evap

I used frozen grated cassava for this recipe. Much easier kasi sa prepping but if you are using fresh, squeese it but not to the point na maging sobrang dry.

I don't know if you call it medium or large but it's about 3 inches wide when measured.

Medium lang. Not an issue sa heat sa pichi pichi kasi hindi sya maselan gaya ng puto at kutsinta
