Awesome to be full time mom ! I’m full time mom myself ! I teach English for non speakers of the language from home . My family and I were in California , month back .
Quick one about cooking Matta rice . My husband is from Kerala . We soak Matta rice overnight, next day drain water I use it to water my plants . Using fresh water , pressure cook with some oil and dime of salt just for whistles in the cooker . Most of the water is drained off , whatever left use strainer . Try this method lot easier I felt .

That’s true when you refrigerate rice for minimum 12 hrs after cooking glycemic index tends to drop slightly example if glycemic index was 150 after eating freshly cooked rice it tends to drop to 130 if same rice has been cooled down in refrigerator after cooked and reheated. Even better when a spoon of coconut oil is added while cooking the rice, this tends to reduce glycemic index too.
Ps: i have gestational diabetes so I’ve been testing my blood sugar levels after every meal and I’ve been experimenting and finding methods to include rice into my diet.
