* CHICKEN AFRITADA RECIPE*
Ingredients:
1 kilo Chicken drumsticks or thighs
1 tbsp of vegetable oil
3-4 cloves of garlic
1 onion
4 large tomatoes
2 tbsp fish sauce
1 cup water
3 dried bay leaves
3-4 potatoes
3-4 carrots
Tomato paste or tomato sauce
1/2 cup green peas
Salt and pepper
Instruction:
-Ready all the ingredients
-Brown the chicken in a pan
-Sauté garlic and onions, cook for a couple of mins
-Add fresh tomatoes, cook for 4-5 mins until tomatoes soften
-Add the chicken
-Add the fish sauce and water.
-Add the bay leaves, simmer until chicken is tender
-Add potatoes and carrots, cook for about 10 mins
-Add bell peppers, continue to simmer for 5 minutes
-Add tomato paste ( I also add tabasco or dried paprika if I want it to be a little spicy)
-Add green peas
-Salt and pepper or add more fish sauce, adjust this to your liking
-Serve with white rice and Enjoy! :)

Your home looks so clean n simple yet beautiful love the white everywhere floor,curtains,furniture it just gives that peaceful feeling while watching . Love your Christmas tree n the decoration you did . For the past few days i've been searching for good books to read during this Winter so Thank you for the book recommendation surely gonna read them one by one. Heard about it that during the Winter it stays dark n grey throughout the day in Finland n i agree that its quite depressing ,sending all the positivity your way . Takecare Jen ♡

This is beautiful Jen, tree is gorgeous. As always so relaxing and uplifting. It'll be a few weeks b4 we put our tree & decorations up but I love all the memories wrapped up in the baubles we have, remembering where we bought them etc. I still have one's from my parents tree, that I remember from childhood & one from my grandparents.

In winter when the weekends are cold and dark, we loved spend a Saturday at a museum and Sunday at home reading and watching games. Thank you for the content and the book suggestions.
Your tree looks beautiful Jen and the scones looked yummy 😋 I totally get your feelings about the winter months as living in Scotland we also have very short daylight hours November to March! Similarly, I enjoy lighting more candles, keeping cosy and embracing what the season has to offer. Enjoy reading..books are good for the soul ❤

That's my biggest concern about moving to Europe. I'm from Trinidad and Tobago where we have lots of sunny days, even during the rainy season there are moments of sun. When we have consecutive days of rain, i feel depressed, so i can imagine how it will be with MONTHS of no sun. I will have your videos and the solidarity to cheer me up. Great video. We got our first snow storm in Fawnskin Ca. by Big Bear top of the night .
As much as I look at other book genres, I always come back to my British mystery novels😊. I may have read them several times but I always find something new that I missed before. A good cup of tea curled up in a comfy blanket with my mystery novel and I’m good for winter!
May I ask if you could recommend your favorite two or three for someone like me who is new to British mystery novels and wants to start reading that genre…This Winter season would be a great time to start one…Thank you, in advance, for your time if you can 😌
@@crystaljones1747 Hi Crystal, I am into British mysteries also and read alot of Deborah Crombie’s books. There are so many that I haven’t read them all yet. If you are in the US like me there is an app called Libby that you use your library card with and borrow books online. I don’t know if it works in other countries.

Your Christmas tree is beautiful! Your home looks so warm and inviting, very peaceful. I just placed the order for my books for winter reading. I bought a couple thrillers, a book about indoor plants care, a cookbook. I put "Practising simplicity" in my Xmas list. What kind of books do you like to read? My husband loves scones, I have never tried to make them but you made it look easy so I really want to try to bake some next week and I will definitely try this chicken recipe, it looks delicious! Love your Xmas tree, I remember it from last year. We don't change ornaments but each year we add one ornament that represents something important that happened.
This year I will add an ornament from Brussels, the city my daughter moved to 7 months ago.
