    Okay, Instructions: #8 "Will last for a couple of weeks in the fridge". I believe you, but I'll never know for sure 😆This is seriously great! I made a bunch of recipes for weekly meal prep and I had this chilling in the fridge while the Ginger Snap Molasses cookies were cooling on the counter and the Classic Vegan Cheesecake was firming up in the freezer. Y'all see where I'm going here... It was also very good drizzled over the Cheesecake. Thank you Jill. This is really really good!

    I'm not vegan or vegetarian (yet) but never liked the idea of lemon curd having eggs in there as we can't use the whole lot in a short amount of time, so this is just perfect. Love it.

    Thank you for this recipe! I have a nut milk maker and the ease of that and simplicity of this recipe, I can’t stop using the oat milk method now! I’ve made a grapefruit curd and a pumpkin pie pudding using the base of this recipe. So delicious!

    Strain the oatmeal with cheesecloth and use it in the bath to wash your face and/or body. It will leave your skin feeling luxurious!!! Love the recipe, too. :)

      i made it and it was great...i did add a sugar substitute..and i used the same recipe except used dried apricots instead of dates with no sweetener..just lots of dried fruit...really yum

    Your classic "cheesecake" can easily be transformed into a lemon "cheesecake". For Christmas, I intend to try out that idea. I'll double the lemon curd recipe. Half of that will be the topping and the other half will be folded into the filling.

    I’ve been meaning to make this for several months. Finally got to today and it’s DELICIOUS! Seems all of your recipes I’ve made are really fantastic, gonna have to buy your recipe book.
    Btw, I mixed a couple of tablespoons of this with a half cup of Fromage cashew yogurt and it made a really delicious and creamy lemon yogurt. With a tiny bit of heating and topped with a dollop of coconut whipped cream it would make a divine warm pudding too.

    if you want to avoid grains ie oats which are sprayed with pesticide you could use potato starch and stevia to sweeten it.

    I'm not going vegan anytime soon, and I love the crap out of lemon curd. Problem is when you use egg yolks, it eventually has that nasty sulfur-ish smell from the eggs and it reduces shelf life. Weird gross egg taste..
    Tried this recipe with blended Apricots instead of dates and a bit of Stevia. Came out DAMN good!

    Great recipe! It would be very helpful if you'd link the products you use and where to get them ~ everything from the blender to the jars, etc. It helps new people in the kitchen find tools for vegan cooking! I just bought Meyer lemons and can't wait to make this :)

    I wonder how it tastes if you put a teenytiny pinch of kala namak into it (to resemble the egg yolk)…….definitely a must try recipe because of the healthy ingredients (oats! .....who would have thought…...) :D

      I add kala namak to most things that are usually made with eggs, e.g. in my pancakes and it is just sooooo good. Sometimes I don’t think of the egg flavor as something positive though (as some versions of pasta carbonara, where it really tasted too much egg yolk, esp. versions made with milk or cream to be very rich - yuck), then I leave it out. And I just LOVE using flax «eggs» and also besan flour «eggs», depending on what I’m making. Today I tried something new, I made pancakes with half besan, half whole wheat flour and added carrot powder and kala namak. It wasn’t all successful, BUT, what really surprised me, was the wet and creamy texture it got, so egg-like. Just like wet, creamy scrambled eggs, which i for sure did not expect! It may just be something to experiment more with... I guess I have to make more carrot powder soon, ai just loooove powders! ☺️

    I love this idea! I have been experimenting with making oat milk, but it always comes out slimy. You don’t seem to have that problem in this recipe. Do you know the secret to avoiding slimy oat milk?

      If I mix it for more than 1 minute it seems to be slimier but honestly it still does sometimes. Maybe it is the different brands of oats and how they are processed.

      They are actually rolled oats. It is the whole oat steamed and rolled flat which is why they are called rolled oats

      I was going to ask the same. I tried oat for the first time this weekend and wasn’t a fan. It is store bought with just oat and water in ingredient listing but I find it too sweet of that’s possible. This recipe would be a good way to use it up.

      Nicole Sykora many commercial oat milks use hydrolyzed oats to release their sugar. This means it won’t thicken the same and will be higher in glycemic indez

      Keep is very simple. Choose one simple breakfast, and one or two simple lunch/dinner recipes and eat that for a while. Only drink water. By simple I mean something like avocado toast (no spices or onion), or quinoa with black beans, or potatoes with broccoli. SIMPLE!

      It is a Blendtec Professional 800. We were living in an apartment at the time and we use our blender a lot. These powerful blenders are very loud so we got the blender that had a “silent” case out of respect for our neighbors 😊

      It doesn’t work the same with commercial oat milk because of all the extra ingredients and fillers that are in it. If you use homemade that is just oats and water, then yes👍

      Maybe some other plant milk and add corn starch to thicken it up?

      not really sure if it will work because of the additional ingredients that are typically added to store bought plant milks

    Everyone else in the comments seems to have had no trouble but mine wouldn’t thicken 😢 (needless to say I’m not great in the kitchen)

      How long did you stir it on the stove pot? That's when the thickening happens.

    It looks good, just not sure about all the starch and dates, I guess because I'm used to doing keto desserts. I think 1/2 c. dates needs more than 4 medjouls. I see it turns out kind of dark but that's ok.
