Some tips on handling Thai-level spice~
    1. Rice is your friend! Don’t overcoat it with whatever spicy dish you order. You can use rice as a neutralizing agent.
    2. Ease into it! portion the rice so there’s a bit more of it on your spoon than the main dish. Keep trying mild-spicy then gradually increase (ex. ask for only 1 pepper in your papaya salad, etc).
    3. Water/soda/non dairy bevs usually make it worse. Have some iced coffee/milo/Thai tea on hand! fresh fruit and ice cream also help.
    4. If you order a variety of dishes, balance the spice by eating small amounts of the other dishes (anything with coconut milk, starch, sugar, desserts).
To order mild spicy just say “pet nit noi” (pet = spicy, nit noi = a little bit) with the finger gesture (thumb and index) to show how little spice you want lol
don’t force it, take it slow 😌
one day you will be able to eat like the locals!! Good luck, I believe in you!! ✨✨✨

This is great advice, but there's one caveat. There is no standard spicy for any one dish. Much depends on the restaurant/stall you order at and how they prepare it.
Sure, some dishes are inherently spicy and others not but the level of 'standard' spice in dishes like pad kra pow, larb etc can vary wildly. Best when you've found a range of places to eat you like to play around with their spice levels to suit your taste. Anywhere new is like a lottery, although probably best to err on the side of caution with Tiff's tips if you aren't great at eating spicy.
Also some dishes require spice and asking for "ped nit noi" can ruin their enjoyment. Larb is a good example of this. As some say No spicy, no fun or roughly Mi Ped, Mi Sanook.
Last thing to remember is usually when Thai people say they "don't eat spicy" it means they eat spicy but at a low level, as oppose to westerners who say they don't eat spicy and mean they can't eat anything with chilli or any kind of spice heat.

Everyone's starting spice tolerance varies but if you keep eating spicy food consistently you'll be surprised how quickly your tolerance improves. It's kinda like foods that are an acquired taste such as Vegemite. You'll get there and soon understand why so many foods level up in taste with a bit of heat.

Nice work! I am going to Ekkamai primarily to see his restaurant as have been a long time fan of his. But yes, spicy food mate can be a challenge. I worked myself up to it by having it as often as I could but working my way up slowly. Rice and noodles help as do cold milky drinks close by! I sprinkled chilli flakes into almost all my meals before coming to BKK the first time!
I will be there in 2 weeks for this latest trip and can't wait to try this particular dish. Great video, you'll be a pro in no time!

You are very good at trying spicy food. But I recommend that if foreigners who have just tried spicy food like basil stir-fry Next time, you should avoid drinking cold water to reduce the spiciness, it's a misconception. Because the coldness of the oil allows the spicy substance (capsaicin) to stay on your tongue longer, the longer you drink it, the hotter it gets. And be warned, the spiciness of the chilli and the cold water can cause diarrhea. You should drink normal or warm water when eating spicy food to help dissolve the spiciness on your tongue faster.

I move my level by eating noodles. The good thing with that is you can adjust to your liking and tolerance. And as you get used to it more, then you can add more. One bowl of noodle soup with a flake of chili powder to start with, then you can increase per your liking. And yes, it is more of a daily practice if you want to improve fast.

My personal tip! The best remedy after your tongue is burning, the first thing you do is to put a teaspoon(or more) of sugar on your tongue and let it dissolves on your tongue for about a minute (do not swallow during that time) then you will feel a lot better. You can trust me on that because I am Thai and I love hot food and I have tried N0. 5 at the restaurant too which it was very hot for me too .... and I had to put sugar on my tongue too .... you don't have to drink a lot of water or else like other people do, it's not gonna work, believe me !!!

Number 5 write in Thai as "Ped Mak" mean "Mark's spiciness" (Ped = spiciness, Mark = a lot ) refer to Mark's favorite level of spiciness which could kill many Thais. LOL

When you eat spicy food, you may try not to drink a water, just stop eating for a minute. It will make you feel better. I think, the water would make the spicy feeling more spreading in your mouth.
