    I got to say cooking for living is hard. You got the smoking grrrr, sweaty hot, standing on your feed all day. Then now you have to got the talent and showing off your enthusiasm too. So please appreciate the chef.

      luckey008 it's not that had if you really are devoted to it and enjoy doing it you aren't just a natural hibachi chef it takes years of practice and you have to be devoted to it and actually enjoy cooking so I imagine most like what they do

    this is really impressive, they have a few spots near me that do this but i havent gone to one yet. I like it because its more than just cooking its entertainment and hosting all in one.     I am Japanese living in Japan. This chef is not Japanese.
    The majority of Japanese chef will carefully handle the food.
    Japanese don't like flashy too performance, such as compromising the taste.
    You have visited Japan and then expect to eat authentic Japanese cuisine.
    I'm sure I think you remember impressed by the delicacy of Japanese cuisine.

    True, and you are correct. However, the high heat of the grill is sufficient to heat the instruments enough to kill most bacteria; keep in mind this grill is not your average frying pan. If you notice the beginning of the video, the oil quickly smokes, indicating that the temperature of the grill is roughly around 300 degrees C. Flash point of oil is about 327 degrees C.

      ***** Well, teppenyaki was always influenced by western food and actually only gained popularity as foreigners in Japan discovered this flamboyant way of cooking. It has always been more about show than the food. Foreigners probably thought this was something genuinely Japanese, even though it was basically a Japanese way to make western food... which ironically as said mainly was popular among foreigners. So yes, it's a Japanese invention but with an ironic twist. Especially, since I guess many people go to these restaurants to experience (what they think is) Japanese culture. When in fact they are actually looking at a Japanese mirror reflecting their own culture...

      You're right and wrong. The actual hibachi as we know it today is an alteration of a traditional Japanese device. The juggling of knives, and all the neat tricks with the eggs and the onions etc. were introduced by fairly modern American restaurants in order to "put on a show".

    This is a Japanese cuisine.
    However, it is not the Japanese.
    Japanese traditional ones.
    Japanese cuisine, including well as such as "curry rice" and "Katsudon".
    So, this is but a Japanese cuisine, it is not the Japanese.

      近代になって日本に入ってきた料理のアレンジだろう。
      もしかしたらこの料理のルーツは君の国にあるかもしれないよ?^^

      例えば「天麩羅」これはポルトガルから来た料理で日本人がよりおいしく食べるために改良し数百年がたったものだし、「ラーメン」も元は中国から来たもので日本で改良された。
      動画の料理は日本に来てまだ時間がたってないから「日本の伝統ある料理」とは言えない。
      でも、「日本の伝統のない料理」とはいえるかもしれない。
      日本人の特徴として「良いものを学び、よりよいものにする」というのがある。
      元の料理からかけ離れて「別の料理」といえるまでになれば日本料理だね。
      あと「和食」と「日本料理」はニュアンスが違う。
      「和食」は伝統的な日本の料理で専門店でないと食べることができなかったり、高価だったり、家庭では作ることがなくなってきた料理。
      「日本料理」は家庭で作ることができて安価なものという感じだね。
      これは人によって意見が分かれると思うからこういう考え方もあるっていう程度にとらえておいてほしい。
      なにせ私は日本人だというだけで研究家でも何でもないからね。
