Affogoto with Homemade Vegan Vanilla Ice Cream: Ninja Creami Recipe

  • We are going to make another recipe in our new favorite kitchen appliance - the Ninja Creami.
    Julie will make a vegan vanilla ice cream and I'll make a date oat vanilla ice cream that's whole food plant-based without refined sugar!
    Then we'll make an affogato by pouring homemade cold brew coffee over it.

    I would like the recipe in the show notes. There is a lot of fun talking which is great but it doesn't help me keep up with ingredients. Great show!

    Almond/cashew JOI, they say in regular recopes use half the joi than the amount of nuts called for in a recipe.

    I’m Italian, the right word is Affogato, which means Drowned! 😃

    Love your shows Kathy! I just bought a Ninja Creami this morning. Substitutions in the book seem limited. Could you use some cooked tapioca as a thickener? Could you use melasses in a pumpkin ice cream as the sweetener? Could you replace egg yolks in gelato with flax eggs? What can you use to replace coconut cream? Thank you!

    I see it's been a year since this has aired, but I would like to say that we have been using honey in ice cream for years. Replace your sugar with a couple of tablespoons of honey, the ice cream stays softer even after re-freezing. One of the original Häagen-Dazs vanilla ice creams was a honey ice cream.

    What about just blending in cooked soybeans?

      That can work, but you will need to adjust the amount to get the perfect consistancy.

      @@KathyHesterVeganRecipes I am just getting started with the Creami. But instead of using okara and/or soymilk, I am thinking why don’t I just cook soybeans and use them blended. Not particularly for this recipe but for many. Thanks for all your good advice. One of my first recipes I made up (I always work my whole food recipes on the fly) was: coffee/ cocoa/ canned chickpeas/peanut butter/ regular potato with skin/ dates. It was awesome! I added the peanut butter because it tasted too much like canned chickpeas. Thanks again for your inspiring work!
