Fried Grouper Cheeks and Homemade Tarter Sauce

- Fried Grouper cheeks and homemade tarter sauce is what's on the menu at the Drinkwaters today. Get the printable recipe at www.thebeardedhiker.com . If you have never had grouper cheeks then you should seek them out at your local seafood market and see if they are available. If not then this fish fry batter and tarter sauce are excellent with any type of fish.
Marinate Grouper cheeks in butter milk and hot sauce.
Fish Fry batter:
2 Cups of flour
2 cups of cornmeal
2 TBS salt
2 tsp of pepper
2 tsp paprika
2 tsp of cayenne pepper
Tarter Sauce :
1 cup of mayonnaise
Dash of Worcestershire
dash of hot sauce
pinch of salt
pinch of white pepper
1/3 cup of dill relish
1 TBS capers minced
1 egg chopped

My mom used to buy the cheeks and throats from Buddy Gandy Seafood in P.C. They were dirt cheap and considered "poor people food". They were amazing and we ate the left overs with eggs for breakfast. She used Zatarain's Wonderful Breading mix.

I love fish cheeks! Bet that's Dynamite! Interesting to put egg in the tarter sauce... I may try that. I know you eat Grouper because that's what's available down there... but to do this same treatment with halibut cheeks would be insane! I’ve had halibut cheeks, not grouper cheeks yet. I suppose I will. The Tabasco Cayenne garlic is my daughter’s favorite and toward the top of my list too. Those looked great, so did your sauce recipe.

@@JaxxDrinkwater Yellowtail is a popular one, also salmon, black cod, sea bass, grouper, snapper. It’s good stuff man. Some people call it the sparerib of the sea hah.
