There is a video by the youtube channel "SciShow" explaining why - basically, the regrown part of the liver isn't an exact copy of the original one - it's not an actual regeneration. Therefore, the regrow abilities of the new part are not as good as the original liver's, which makes it way more complicated both for the donor and the recipient. Sadly we can't divide and grow a liver forever.

The liver has to grow ‘inside’ a body, just like the foetus has to grow inside a woman. Else livers and babies would have borne in hanging nests of weaver birds.

Gall bladders are sometimes removed for health reasons and the patient continues to live normal life - per NHS: You can lead a perfectly normal life without a gallbladder. Your liver will still make enough bile to digest your food, but instead of being stored in the gallbladder, it drips continuously into your digestive system.
