Today's simple vegetarian meals consist of a breakfast, a lunch and a dinner! I spend a total of $16 to make 24 (26) meals which comes out to a little less than a 62c per meal. Breakfast equals 8 meals, lunch was 16 and dinner was 2, which was actually 26! Let me know in a comment what food budget you'd like to see from me in the future!

Your recipes always look so good. Our weekend plans are finally planting our garden. I tilled on Monday and while I loved every second of it, my arms hurt for a few days after. Then being in Washington our weather went from spring and warm, to cloudy and rainy. But we gotta get our seeds in the ground and our starts planted. Our 5 yr old daughter planted her flower seeds in her pots ( silly girl planted a whole packet of seeds per pot 🤦♀️. We let her do what she wants though with her flower garden, and she helps mom with the veggies. Her and I both love picking fresh veggies and eating them without bothering to wash them. A little dirt never hurt anyone, plus we don’t use chemicals in our garden.

My mom used to make that for us as kids to trick us into eating vegetables and she did just that. It's delicious and I haven't had that in over 40 years.
It tastes just like pizza! A kid wouldn't know they were eating vegetables. 😊😅

For the vegans, I wonder if I could use like a chickpea “omelette “ batter on the sheet pan? I am trying to make healthier plant based options these days . I could make biscuits if I felt the need lol and I have EARLY mornings 3-5 days a week. So I have been looking for preppable grab and go options. Cause I can barely make coffee in the morning let alone breakfast lol XO Davita

I finally started using Earth Breeze because of you! It makes my arthritis happy lol Instead of reaching up and over the washer for a heavy jug, I pull down this little packet of soap sheets. No strain, no pain and our clothes are clean! Thanx for getting me to try it!

This is more up my alley than my roomies. She would probably eat the blueberry pancakes and i could add the lemon to mine lol but I could see all of this ( with some tweaks cause I dont do eggs or dairy) being great for my meal prep. And I love the meal prep every few days idea! But for me it might be depending on if I have hit the ick if I make the same thing lol. Sending love your way! XO Davita

I have been eating raw zucchini salads lately. One was literally a Greek salad but instead of cucumbers, zucchini. It was great. Feta, a lovely vinaigrette, bell peppers, tomatoes and a bit of onion. I ate the world's most gigantic bowl. 😂😂😂 I need to try the zucchini pizza things next

I’ve made a n Italian version of this and par boil the zucchini for about 5 min then they don’t have to bake as long. I’ll usually just cut them in half, boil them then scoop out the middle. I’ll have to try this pizza version!!

Nope! I’ve said over 200xs in the last few years I ate a plant based diet. It can be mistaken for a vegan diet but veganism is very very different it’s more than just a diet but thankfully I switched out of such a structured mindset with my diet 🙌🏻
