How to make BBQ Jerk Chicken Bondi Harvest

    Ingredients
    1 Organic Chicken
    Jerk Marinade
    Coriander root
    1 x brown onion
    4 x garlic cloves
    5cm x ginger
    3 x fresh chilli
    thyme
    100ml x bbq sauce
    Pinch Dried chilli
    1 x tsp cinnamon powder
    1 ½ x tsp all spice
    ½ cup spiced rum
    1 ½ x tbs brown sugar
    1 ½ x tbs sugar
    Method:
    Place all in food processor and blend until combined. Butterflied your whole chicken and pour marinade over. Cover and refrigerate for 12 hours (you can marinate for less time - 12 hours for really tasty results).
    To cook the chicken place on a hot bbq skin side down with the lid closed. Let the skin colour and crisp up a bit then flip. Make sure your baste your chicken with left over marinade after turning.
    Cooking should take approximately 10mins on each side - but keep an eye on it you don't want to burn the outside too much.
    Apple Salsa
    1 x Spanish onion
    3 x green apple
    1 x chilli
    1 x mint
    2 x lemon juice
    2 x lime juice
    1 x avocado
    Chop everything and toss in a bowl. Dress with Lime and Lemon juice (olive oil optional)
    Enjoy!

    loving the coriander root inclusion. If you ever get access to culantro (not cilantro..which is basically coriander) give that a shot!

      Bondi Harvest It was amazing! It wasn't as spicy as I thought it would be( I got carried away with the chilli) but it was loaded with flavor. I had some leftovers too so today I tossed the leftover chicken and apple salsa in a salad. It was too tasty. :)

    What flavor the rum bring to the jerk marinade. Never heard of using rum before and I'm from Jamaica.

    This looks so good - I can't wait to try it! Just one question though - what could I use as a non-alcoholic substitute for the rum in your recipe? I heard somewhere that pineapple juice might be okay for this; what are your thoughts?

    That knife is beautiful ! Please share where it's from or what the brand is? Looks like it has hammered detail & I love my knives! Also are they a brand a knives that you really recommend? I'm in need of a new set that will last me for a life time! I currently have Wustof.

      the brand is shun, its a 6 inch premier .... they are a piece of art, and one of my favourite knifes to use :) ....
      Wustof are a great heavy strong steal knife, the shun is a softer/ lighter blade, they get super sharp ... hope that helps

    If you don't mind me asking, what kind of knife do you use? It seems to cut through everything so easily.

      It's a shun premier 10 inch chefs knife by the looks of it, they're good, but, very expensive and in my opinion too pretty and ornamental to use.

      shun premier 16 inch chefs.. its such an awesome knife, a real pleasure to use....I use it all day every day in the kitchen at my restaurant and never get sick of looking at it, its a real peace of art.

    You should have place the chicken into the bag and pour the marinade inside then mix it. One less dish to clean :P and no waste of marinade, but not really. I wish I can smell it.
