Cannot imagine a pickle without mustard...mustard is the main ingredient in any pickle..it is the game changer and gives such a unique taste to the preserve.
Yes ...one can use it taste will b different...usually mustard is used for plant products

Once I soak the chillies, i use the left over vinegar to clean/wash the mackerels and use fresh vinegar to grind the paste

How much onions did you saute before adding .to the masala and grinding it. Which is the vinegar you used. It looked like some fruit vinegar. Which capacity were the vinegar bottles: 600 ml, 750ml or 1 ltr? I am sure the pickle will be very tasty.

Do not have to store in the fridge ..you can keep it out for months but dont allow moisture to its contact
