Crispy Lemon Chicken with Sweet and Sour Lemon Sauce - Chinese Style 酸甜檸檬雞

- This Lemon chicken dish is sweet and sour, and also savory. It has a delightful flavor most everyone will enjoy!
There are just two simple steps in creating this awesome dish. First, deep fry the marinated chicken. Second, make a citrusy lemon sauce to flavor the crispy chicken pieces. Enjoy!
INGREDIENTS
1 lb (455 g) chicken breast or thigh meat
Vegetable oil (for deep-frying)
Marinade
2 tbsp soy sauce
2 tbsp Shaoxing wine
1 tbsp cornstarch
1 tsp white pepper
Batter
½ cup cornstarch
2 egg whites
1 tablespoon vegetable oil
1 cup (120 g) cornstarch for dredging
Lemon sauce
3/4 cup (178 ml) water
1/2 cup (120 ml) lemon juice
2 tbsp rice vinegar
2 tbsp soy sauce
2 tbsp cornstarch
½ cup sugar
½ tsp salt
2 teaspoons lemon zest

I've never made lemon chicken before. This looks so yummy and super crispy. I can hear it when you dropped it into the wok. I love the double frying method. The zest gives so much of the yummy lemony flavor as well as aroma, I can eat this whole plate on its own. Excellent sauce, it will go very well with fried fish as well as any fried nuggets.
