Easy Mode was always unlocked.

tbf, some things are harder in easy mode. e.g. Zombies don't pick up items. Kiara had issues with her zombie despawning and wasted time trying to give her zombies helmets to keep them safer from sunlight. Also, villagers just die instead of transforming into zombie villagers that you can cure, which is why they didn't have an iron farm earlier. The damage difference isn't huge either. It's 50%, but that's just a half-heart difference for most mobs.

Doesn't change much if you set it to normal, not all zombie will pick items up in normal, villagers have a 50 50 chance of turning into zombie. If you set it to hard tho, undead mobs will pickup items and villagers will turn into zombies 100% of the time
