    • THE BEST KETO PUMPKIN ...
    Keto Pumpkin Cheesecake Recipe:
    Use a 9" springform pan. If you are using a 6" springform pan, half this recipe like I did in the video!
    Servings: 10-12
    Crust:
    1 cup almond flour
    2 tbsp powdered sweetener (I used this: amzn.to/30uR2kx)
    1/2 tsp pumpkin pie spice
    4 tbsp butter (I used Kerry Gold)
    Filling:
    16oz cream cheese or 2 packs, completely softened ( I used Philadephia)
    1/2 cup pumpkin purée (I used this one: amzn.to/3naOXE3)
    1/2 cup sweetener for monkfruit, confectioners. If using allulose - do 2/3 cup sweetener (I used this: amzn.to/30uR2kx)
    2 eggs, room temperature
    1/2 tsp cinnamon
    1 tsp pumpkin pie spice
    Optional: Dash of salt
    Condensed Milk Topping: • KETO SHAVED ICE! How t...

    You really don’t want a cheesecake to crack, if you turn the oven off but leave the cheesecake in the oven with the door cracked slightly it will cool slowly and won’t crack! 💁‍♀️

      Yes! That crack would drive me crazy. I was cook cheesecake in a water bath and let it cool slowly with the oven off and the door cracked ( put a wooden spoon in the door to keep it open)

    I made this recipe tonight. Instead of using a pan, i used a muffin tin to make cupcake sized portions. This recipe is incredibly delicious!! Im so happy i tried it 😍

      @@iselajaime i made the crust as well :). Just press a little bit of crust mixture into each muffin case/paper. After cooking these little cheesecakes you can peel all the muffin papers off and the little cheesecakes hold together perfectly :)

    I made this for my son, and he loved it. I couldn't find the unsweetened condensed milk, so I wasn't able to make that part of the recipe, but I bought the sugar free whipped cream. Thank you for sharing your recipes. I make these recipes to keep my son on track, and he has not felt deprived during the holidays. I see the pounds melting off of him. Thank you so much!

    Excellent recipe. I went a little heavy on the butter in the crust but it still turned out very good. It tasted even better the next night! This will be great to serve guests at Christmas dinner.

    I will try your recipe tomorrow, it looks so good! I have been using monk fruit in many of my recipes but sometimes I think it does have an aftertaste that I am not crazy about! I bought the Allulose sweetener today, I hope I like it better than Monk fruit! Thanks for all your great recipes, I tried many already and they are delicious, you're the best:)

    MAYRA!!! OMG!!! I made these yesterday for thanksgiving tomorrow and they were in fridge overnight. I am AMAZED AT HOW DELICIOUS THEY ARE! Tastes just like pumpkin pie with cheesecake twist.     So glad I have a toaster oven !This is just what I've been looking for! Looks SO delish. If I made this in my oven, I'd add a big tray of chicken to cook at the same time, maybe think of something more to add. If u heat the oven, may as well fill it up. Bake some potatoes if your family eats them. Guess I got this habit from granny...she had to split wood to heat the stove. Once it got going, she made max use of the opportunity. Just a historical perspective.

    use a square sheet of parchment and fold it around the disc so it doesn't move around on you when spreading the crust

    It's in the oven right now. First time making it. 2 questions: 1. keep it in the fridge couple of hours? 2. how do I know it's done? I am making a 8" and set for 30 mins in the oven. In the video, she showed the 6" and for not sure how long, she said 25 mins and gonna show us but didn't show that part.

    Myra, I have a question - I see that you recommend heavy cream - all my local grocery stores sell is heavy whipping cream, which is nowhere near as thick as what I see you using. Should I whip it beforehand??

      For an entire 9 inch pie, apparently. Remember that what she showed in the video was only half of what the recipe in the description details.

      @@mimked Damn, those are gonna be some small pie slices lol if anyone cut the pie into 6 slices it'd be 14.3g of carbs per slice, 8 slices is 10.75g of carbs per slice and 16 slices 5.67g of carbs per slice.

      @@Samasorus18 when i made this recipe today i added all my calories and carbs up from each ingrediant i used (from the packets they came from). For a cupcake sized serving it was 2 total carbs. I made my in a muffin tin to make the portions easier. I did not use the condensed milk topping nor the whipped cream

      The 6 inch pie is only half the recipe. So that would be 43g carbs for a 6 inch.
      86 g is for an 8 or 9 inch pie

      Hey Michelle - I just redid the nutrition and I apologize for the confusion. The recipe in the description is the for a full cheesecake (9" pie). The one I made on camera is half the recipe (6" pie). It's 45g net carbs for a full 9" pie and 22.5g net carbs total for a 6" pie. It comes out to about 4.5g net carbs per slice 💗
