The vocal technique you asked about at 08:21 is called singing falsetto 😊 you use a different part of your vocal chords here, usually makes it easier to reach high notes.
And at 27:00 it's called harmonies! Usually when notes are certain distances away from each other in the same chord, they make really nice sounds together. It's kind of like note-stacking!
