    🥭 Aam ki launji is a sweet and tangy mango pickle that is a staple in many Indian households during the summer months. Made with raw mangoes, sugar, and a blend of spices, this delicious condiment is the perfect accompaniment to a variety of dishes.

    Aam ki launji is incredibly versatile and can be enjoyed with rice, roti, parathas, or even as a topping for chaat. Its sweet and sour flavor adds a burst of freshness to any meal and is sure to tantalize your taste buds.
    Recipe -
    - peel and cut 500 gm raw mango in medium size pieces- keep aside.
    - heat up the pan
    - Add 2 tsp oil
    - Add 1/2 tsp saunf - 1/2 tsp fennel seeds, 1/2 tsp rai - mustard seeds, 1/2 tsp methi - fenugreek seeds, 1/2 tsp ajwain - carrom seeds,, 1/2 tsp kalonji - black cumin
    - Add a pinch of asafoetida powder (hing)
    - Add raw mango pieces and salt
    - Add 1/4 cup water and cook with closed lid till raw mango is half cooked for about 10 min
    - Add 1/4 cup + 2 tbs jaggery
    - Add 1 tbs Kashmiri red chilli powder (increase or decrease as per your taste)
    - Cook on medium flame till jaggery melts & and you get thick consistency (once it cools down, it will further get thicken)
    - At last, switch off the flame and add 1 tsp black salt and mix well
    - Aam ki launji is ready
