    Gahat" refers to horse gram, a type of legume commonly used in Indian cuisine. Here's a simple recipe for Gahat Ko Soup, a nutritious and flavorful soup made with horse gram:
    Ingredients:
    1 cup horse gram (gahat), soaked overnight
    4 cups water
    1 onion, finely chopped
    2 tomatoes, chopped
    2-3 garlic cloves, minced
    1-inch piece of ginger, grated
    1 green chili, chopped (optional)
    1 teaspoon cumin seeds
    1 teaspoon turmeric powder
    1 teaspoon red chili powder (adjust to taste)
    Salt to taste
    2 tablespoons oil or ghee (clarified butter)
    Fresh coriander leaves for garnish
    Lemon wedges for serving (optional)
    Instructions:
    Rinse the soaked horse gram thoroughly under running water and drain.
    In a pressure cooker or large pot, combine the soaked horse gram and 4 cups of water. Pressure cook for about 15-20 minutes or until the horse gram is tender. If using a pot, simmer until the horse gram is soft and cooked through.
    Once cooked, remove from heat and let the pressure release naturally if using a pressure cooker.
    In a separate pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter.
    Add chopped onions to the pan and sauté until they turn translucent.
    Add minced garlic, grated ginger, and chopped green chili (if using). Sauté for a couple of minutes until fragrant.
    Add chopped tomatoes to the pan and cook until they turn soft and mushy.
    Add turmeric powder, red chili powder, and salt to the pan. Mix well and cook for another 2-3 minutes.
    Once the horse gram is cooked, add the cooked mixture from the pan into the pressure cooker or pot. Stir well to combine.
    Adjust the consistency of the soup by adding more water if needed. Bring the soup to a gentle boil and let it simmer for another 10-15 minutes, allowing the flavors to meld together.
    Check for seasoning and adjust salt and spices according to your taste.
    Once done, garnish with fresh coriander leaves.
    Serve hot with a squeeze of lemon juice if desired. Enjoy your nutritious Gahat Ko Soup!
