I get the same thing, it’s just from crappy milk chocolate so it burns. “ The short explanation is that the methylxanthine compounds found in chocolate can cause throat irritation and a burnt feeling for some people. These compounds, when consumed in excess, can create an uncomfortable burning sensation by blocking signals between nerve cells.”

My light peanut allergy progressed into a severe one overtime. The spicy, itchy feeling was the beginning of it. So, just be careful 😊❤️. I might try this with sunflower seeds considering I'm now allergic to all nuts 😩

The early (1939) ingredients list includes white sugar, sweet milk chocolate, corn syrup, peanuts, milk condensed with sugar, coconut oil, malted milk, whites of eggs and salt.

This seems more like a Milky Way with peanuts than a Snickers. I was kinda surprised that you got all the way to the end before considering that the nougat in a Snickers is peanut-flavored.

Yep. I did this as a kid, I'd "picked out" the nougat and eat it separate from the rest of ther bar (yes I was a weird kid). The nougat definitely taste a lot like peanut butter so it seems a safe assumption theirs is made with peanut butter added and why the 2 bars tasted very different.

Hell, I’m an adult and I still do it from time to time; eat away the chocolate, then the caramel/peanuts, and then I’m left with the best part 😊
In the UK they add left over melted snickers to the nought to make that nutty flavour

Definitely going to try this recipe, except I am going to do a high quality milk chocolate because that's a bit more on point with the snickers flavor profile.
If something is spicy that isn't meant to be, you are probably allergic to something in the Snickers.
I can personally vouch for this as a person with allergies who thought tomatoes, kiwis, and pineapple were meant to be spicy.

TLDR of my edit: For me personally, it's not the acidity of the fruit nor the enzymes, it's food allergies.
I know tomatoes, kiwis, and pineapples are acidic. I've been tested by an allergist and have a confirmed tomato allergy. Eating fresh kiwis and pineapples gives me a similar mild allergic reaction to eating tomatoes: tingling tongue, burning mouth, and burning throat. I have other various mild food allergies that feel exactly the same.
(Based on The Iron Swede's reply, I might have Oral Allergy Syndrome that causes an allergic reaction to fresh kiwi/pineapple and not the cooked kind. Gonna do more research on that, though.)

I think he's talking about the raspy bitterness of the cheap chocolate. I wouldn't call it "spicy" per se, but snickers do give me a weird burning feeling in the back of my throat and I'm not allergic to anything.

Josh’s version struck me as more of a Milky Way Midnight with peanuts. I also think it’s correct that the Snickers nougat is a peanut butter nougat. (ETA: Josh’s version looks absolutely delicious and I always want more texture from a Milky Way Midnight)
You can tell by the colour of the nougat in the snickers, it's a light brown not completely white. That colour would come from peanut butter which is a more golden shade of brown

I thought the exact same thing and kept mentally ignoring the peanuts (to which I am a bit allergic) and imagining that Joshua was creating a But Better Milky Way Midnight. Also never forget that Milky Ways of all varieties share that vein, but for whatever reason the Snickers vein seems to get all the attention. And FWIW, omitting the peanuts that are not my friends, I'm thisclose to attempting this (my neighbour will let me borrow his stand mixer).
also i think snickers uses more of a Hershey's milk chocolate that a lot of US candy's use (might be that burning sensation he described in the back of his throat, as Hershey's milk chocolate has a chemical similar to vomit that is brought out in its processing - butyric acid, which is why the chocolate while loved by us, many places overseas to say it tastes a bit like vomit compared to their chocolates.)
Thank God someone pointed out that snicker nougat has nuts in it and it's NOT plain. Very disappointed Weissman. Didn't know about the acid thing in American choc too, v interesting!

I'm glad you were honest about how it wasn't exactly like a snickers bar - I actually find it more interesting that you created a newish confection.
I confirm, they do add peanut butter to the nougat, you can see that on an episode of how its made or something like that and it's semi salty roasted PB so there comes the extra savour. Also not sure they do use the honey as it is more costly and has a specific taste. I think they go with inverted syrup.
They probably use high fructose corn syrup cuz it's cheaper.

The vein needs to satisfy. The burning feeling you're refeering to is from the butyric acid formed due to the lipolysis process that milk goes through in some types of chocolate. Don't worry it's not allergies, it's just acids tasting like acids hehe

When I was little I hated how there wasn't enough peanuts. With trial and error I learned to make my own. Go I love these! I also just love nougat sooooo... still my favorite candy bar. I do like peanut M& Ms too (basically sugar coated peanuts).
I made these and they are delicious, thank you for the recipe my family thinks that they are delicious and I am guessing no more purchasing of the original bar. I wish I knew how to post a picture for you to see how wonderful they turned out!

Used to have "Contains Egg" on the outside. Could perhaps reference to something else like the nougat etc or something, but never have I even seen it on any other chocolate bar. And just when I exclaimed " Hazaa that must be their secret ingredient" it was removed from the packaging. Still my favy fave of all time ! P.S.: From South Africa with love!

Me imagining Josh laughing everytime he said vein in the opening take so they just went with it.
It tastes different because snickers basically taste like peanut butter which has a slightly different flavour to regular peanuts. Snickers definitely use peanut butter in the nougat (you can tell from the light brown colouring of the nougat) which concentrates the peanut flavour throughout the bar rather than just having a layer of peanuts where the flavour is slightly drowned out by the chocolate, caramel and nougat

Advice from someone who actually did the recipe:
-You can use extra peanuts in the caramel if you want. I used probably 2.5 cups.
- The timing of the egg whites and syrup for your nougat is a little difficult, I'd say start melting your sugar before beginning to whip your eggwhites. They don't take long to whip up and if they whip for too long they will dry out. My eggwhites also required soo much more sugar to get glossy. Also, I melted a heaping tablespoon of peanut butter and finely ground up 1 cup of peanuts and mixed those into my nougat as a final step before pouring. Snickers nougat is peanut flavored! And *do not* forget to pour the syrup down the bowl-- not directly in.
- The chocolate was really difficult, I have no idea how he managed to dip his snickers using forks. I ended up just melting 2x as much chocolate just doing a pour-over to coat them. When that layer hardened I flipped em and piped on the bottom layer to seal . If you actually want it to taste like a snickers, definitely use milk chocolate and not dark. Yes, I tried both haha.
-- This isn't to be condescending; I really enjoyed the recipe!! The textures are literally perfect and everyone loves them. They last in the fridge for days. I just couldn't find many helpful comments so I wanted to add one!

They're not actually getting rid of the veins. A heavily edited article made its rounds on Twitter that claimed Snickers was doing so (this same person even posted a "Snickers" bar without the veins) after its parent Mars announced they would be changing the green M&M to desexualize her. Snickers had to step in to say that they are in fact, not getting rid of the veins anytime soon. And it's honestly pretty funny to see Tucker Carlson completely meltdown (pun intended) over a freakin' candy (let's not forget his meltdown over Disney)...I swear they meltdown over the silliest things
Good effort either way! I did not even think about making candy bars at home until my brother started doing that a couple of years ago, and they tasted better than the store bought ones! Now I prefer the made at home ones. I would love to make a version of the snickers almond brownie bars next.
Joshua's version is like Fran's gold bar but with peanuts. Fran's has one of the best coconut almond joy in the confectionery world.

What they do for the nougat is grind and melt down b grade snickers bars and add to the mix, plus there's no vanilla. Also the peanuts are slightly roasted in a very specific way
Around when you add your vanilla to the nougat you can add a little bit of peanut butter to make it peanut butter nougat.

I used smaller peanuts and like 4 cups of the small peanuts, you need ALOT of peanuts, also they used to much nougat, I used about half that amount of nougat, it was at a 75% nougat to 25% caramel low nut ratio in the video, make it 25% nougat and 75% caramel with more nuts and it will come out tasting like a snickers!

I'm from Avignon and so glad you name-dropped my hometown! Another place a bit further north, Montélimar, has exclusive cultural rights to nougat, but you can definitely buy it in Avignon (which I recommend) :D

I’ve noticed that spicy aftertaste too, and I think it’s the snickers chocolate because I get the same thing eating Hershey’s and it’s the lactic acid additive for me.
yeah, as a brit i think it’s the same thing that makes hershey’s taste a bit like vomit to people who aren’t used to it. i haven’t had american chocolate much but it is vaguely spicy to me. not starting the argument that one is better than the other, they’re different tastes for different people

I've made the Bravetart Snickers a couple times and can vouch for that recipe. The nougat in hers is a peanut nougat.
Bravetart is the gold standard cookbook for classic American desserts as it were. The oatmeal creampie, Oreo and Fig Newton recipes are other favorites of mine.

I remember the first time I ate a snickers in Canada. First bite I was like whoa… way better than US version. The ingredient list was all real ingredients.
Also, for this recipe, I wonder if it would benefit from cooking raw peanuts in the caramel like peanut brittle to up the peanutty flavor. 🤷🏾
Now I've never eaten snickers but I don't think a chocolate bar is meant to have spicy sensation in any way without adding chilli in it. Learnt my lavender allergy that way from unknowingly eating shortbread with ground petals on top mixed with sugar

I think the burning sensation comes from the palm oil they put in the chocolate instead of the cocoa butter, cocoa butter melts at body temperature so by the time it reaches your throat it's melted, but not with palm oil which melts at a higher temperature, then it gets kind of stuck in your throat. Just a theory ^^
need to figure out a substitute for corn syrup as they do not have it here in Hungary..... surely it is not hard to do... I really want to try making this.
