Ohoho...each one looking better than the others. South indian cuisine doesn't have " Fried Rice". This is a variation of chitranna or lemon rice. When we use raw mango usually we grate it and mix with tadka and then cooked rice. We also have another variation wherein gooseberries are substituted for mango. That also is very tasty. Haven't thought of using chopped mango for this. Will try. Thank you.
Great ,all of them r supurb .southindian fried rice looks supurb . My ghee and dried fruits ,spices with some kismiss would be my malabari fried rice. With Mutton stew or fish moli a supurb combo.This is called Manga choru of tamilnadu . Lovely innovations. Thanks
