What I learned at SharkSchool was that this so called "gaping" reflects a simulated bite process, including all bite phases. Sometimes even 10 times longer than an actual bite. It is most likely a maintenance behavior to reposition the jaw elements after feeding.

I swam with a Galapagos shark earlier this year which was one of the coolest experience I’ve ever had, but I think I would crap in my bathing suit if a great white shark made an appearance. 😳
