I have a freeze dryer and veggies and herbs are amazing! Just wanted to voice you a little tip, make sure you vacuum seal those jars with all your goods. Each time you open a jar you need to revvacuum seal to remove the air. The moisture from that small moment of exposure can spoil them over time. I mention this because it is SO much work and I learned the hard way when I first made sweet potato baby food 😬

You can freeze dry eggs if you beat them up like scrambled eggs. Then they can be used in baking and used has scrambled eggs. If you have a lot of eggs to deal with.

We're up in Canada and our growing season is super short but onions and carrots grow so well I've never had an issue with them, just plant and water and you get an amazing bumper crop. So its a trade-off cause we cant grow winter crops cause there's 2 feet of snow and its -30. And on average we only get about 120-130 frost free days so there's only ever time for 1 crop a year.

I enjoyed watching this video so much, it is like food for the soul. May I just say that your husband is an incredibly lucky man. Make dinner for him all but 18 nights a year, seem like a great cook and I know you are because once you start handling food in such a way it becomes second nature, you grow all your own fresh produce and eggs, and you have such a sweet and soothing personality. I’m sure you are just as lucky and have chosen a fine mate, but anyone would be blessed to have you as a wife. This is all I ever want in my life, and to raise my children to do and enjoy the same. Looking forward to when I can move back onto a homestead and do the same. Thank you for your content.

That being said every year is a new journey with awesome successes and some Oh No's! What I love is that it is a never ending education with many, many AHAH moments :) I only use my basil fresh to make amazing pesto. What is the dryer you use on the basil as I have seen that you can also freeze it? I was also curious as to where you are located as I'm in beautiful New Hampshire...zone 4/5.
