I've been cooking Spanish omelette for years but do not use extra virgin olive oil to fry the potatoes and onions it just over powers the flavour. This is an authentic recipe though so good job. 😋

What I would do is just sauté the onions and potatoes in a little bit of extra virgin olive oil, so I don’t waste it.
