For me, it started with Gato. Next was Aces of the Deep. Then came Silent Hunter III and nothing has surpassed that. Certainly with the loving modding community it is the most realistic sim out there.
I didnt try aces of the deep but i loved Gato and SH3.
You would probably enjoy wolfpack and Uboat if i had to guess.

Sierra On-line made some great games in the 90s, Half-Life being one of there masterpieces. I bought the Aces box set back in the 90s when I was a teenager. I originally bought for the WWII fighter pilot games Aces Over Europe and Aces of the Pacific. It also had Command: Aces of the Deep which if you had a microphone you can give the game commands. I did not use the microphone. The game turned out to be the best in the set. Made me love sub simulators. Also, it was neat to be the bad guys.
I used to have silent hunter 5 which is one of my all time favourite games but sadly ubisoft killed it by making it server reliant then shutting down the servers shortly after

Silent Hunter III w Grey Wolves Expansion Gold Edition...
I was very fond of the original Silent Hunter. It was cool seeing B-25's attacking land targets from far out at sea. Now, I'm playing U boat. I like it very much except that the Allies seem to have a plethora of escort's very early in the war, which in reality they did not.
I've only really played Silent Hunter 4 but really enjoyed. I had it on disc years ago and had many hours with it. I loved the setting and the simulation style of the game. I've got it on Steam but sadly it just plays very buggy and keeps crashing.
First off, big shoutout for being a Silent Hunter 4 fan! It's such a classic submarine game with a unique charm. I totally get the nostalgia that comes with the hours spent on the disc version. Good times!

Silent Hunter III + Grey wolves mod
Red Storm Rising on the Amiga. Once you got behind the convoy they were toast. But, hell you had 4 screens on the computer monitor at a time. Great game!!
I remember silent service. Loved that game. I haven't played a sub video game since. I did pick up U-Boat leader board game by DVG 2 years ago. It was ok, nothing great though

The SIlent Hunter series of games are awesome but have a few bugs if not modded. Wolfpack is fun with friends and has the best immersion. Uboat is all round probably the best of all of them. It's so much fun and still gets regular updates.
You forgot about Wolfpack (1990), great sim for that times.

I loved that game! The Hunt for Red October was one of my favorite movies around the time this came out, which made it even better.
