Hungry jack pancake mix $1.25
cream cheese frosting $1.25
True Lemon powder packets $1.25
Frozen blueberries (thawed) $1.25
2 packs of Bacon $2.50
1 roll of sausage $1.25
1 bag of Frigo preshredded cheddar cheese $1.25
1 packet of cheddar garlic biscuit mix $1.25
English muffins $1.25
Margarine $1.25
2 cans of fruit of choice $2.50
1 package of pecan twirls $1.25
2 jugs of juice of choice $2.50
Total cost $20.00
Serving platters optional $6.25
Baking Bacon: Lay bacon on sheet pan and bake at 400 degrees for 12 minutes until crisp. Drain on paper towels
Sausage balls: mix biscuit mix, shredded cheddar, and uncooked sausage together, add 1/4 cup of water (a little more or less as needed) and knead together by hand until a solid dough forms. Roll into 20 1 inch balls and bake at 400 degrees on a lined baking sheet for 12 to 15 minutes.
Blueberry lemon waffles: drain and rinse thawed blueberries, toss in a small amount of dry pancake mix. Mix the remaining pancake mix with 2 1/4 cups of water, 2 tablespoons of oil, and 4 packets of true lemon powder. Stir in blueberries and cook 1/4 cup of mix on a preheated waffle iron until cooked through. Makes 18 waffles. Can be frozen. To keep warm, put waffles on the rack of a 170 to 200 degree oven until all waffles are prepared.
Lemon Cream Cheese glaze: mix 1 cup of cream cheese frosting with 2 packets of true lemon, and 2 tablespoons of water. mix and microwave for 30 seconds and then mix again until combined.
Oven toasted English muffins: separate all English muffins and toast on sheet pan simultaneously. 400 degrees for about 8 minutes should about do it
if desired, pecan twirls can be drizzled with cream cheese glaze to make them more like cinnamon rolls. I would warm up some cream cheese frosting without the lemon powder specifically for these if doing that method. also pecan twirls can be warmed in the oven for 3 minutes or so to give them a more home baked effect.
Canned fruit should be drained prior to serving but be sure to save the fruit syrup for flavoring and sweetening teas, this can also be used as an additional fun beverage for your brunch if you've got some tea already on hand.

You can also put some of the frosting on the pecan rolls to make them more like a cinnamon roll. The sausage balls look so yummy!! Great spread!

🍊🍍🥥 If you have coconut in the freezer (like I do because we never need a whole bag for one recipe), you can make an easy tropical salad. Mix drained mandarine oranges and diced pineapple. Sprinkle coconut over the top before serving. It’s simple but tasty. Could probably toast the coconut but I don’t.

Another good fruit salad idea. 2-3 cans of fruit (whatever you like). Drain & reserve 1 cup of the juice or syrup from the fruit. Mix liquid with 1 instant vanilla pudding mix. Stir in fruit
I was today years old when I found out about true lemon crystals at Dollar Tree. I like lemon tea and they would work great for putting into my tea! This looks like a simple and delicious brunch that children could do with a little supervision. Thank you !

Frozen blueberries and crystallized lemon also make a great compote. Just add a little sugar and cook on the stove until syrupy. It could work as an alternative topping for the waffles or spread on the English muffins like a jam

I found your channel about a week ago and I love your videos! My mom used to make sausage balls every Christmas Eve for our open house party. If there were any left we would eat them cold on Christmas morning. They were so good dunked in mustard! I just started making them for my kids. I make them much smaller than you because they puff up. Lol, we use them as a little snack. One of the best. Thanks for sharing all your awesome ideas!
Good work. Nice variety too. FYI, if no syrup is available a butter sauce can be made by bringing sugar & water to the boil, add butter, cornstarch slurry and vanilla, add a wee pinch of salt if using unsalted butter. Serve over pancakes, crepes, etc. (it's also tasty over vanilla cake instead of frosting).
I've also made this with water in which sliced apples (with sugar and cinnamon) have been parboiled till soft. It makes a buttery apple cinnamon sauce; serve sauce alone or together with the apples over pancakes, etc.. Looking forward to next week's video! 💖 🙏👑✝

It’s great! I’ve had it for 10 years and it still holds strong. I love making and freezing my own “eggos” with it, which is what happened to the lemon blueberry waffles in this video 🥰

Rebecca did you know that your oven while it's running and the drawer underneath that you usually keep pots and pans in is actually a warming oven that's what it was originally made for but today we use it for storage it's actually a warming draw so you could put your waffles on a tray in there.
Fun fact when I was 1st married I had a wall oven that had the draw also (50+ yrrs ago.)😊 love your show.
My oven isn’t made like that, newer ovens don’t have that feature, that was more for older ovens. My drawer stays cold even when the oven is on

I haven’t tried this with sunny-d but I had a punch at a ladies brunch once. It was orange juice and some kind of soda like 7up or ginger ale. It seemed a little more special than just orange juice. 😁
in the 60's aandd 70's every brunch had a punch. froze a bowl of juice with fruit in it and poured juice and some soda like 7-up over it and the ladies always acted like they never had anything as lovely.

Another cheap cake with only 2-3 items:
Oil
1 package (16.5 oz or 432 g)cake mix - I like devils food or spice
1 can (15 oz) pie filling - I like cherry pie or solid pumpkin
But make your own combination
Optional toppings: cream cheese frosting, microwave melted can frosting(like she did), powdered sugar, ground cinnamon or caramel sauce, or your own topping creation - I happen to like them without a topping due to how sweet they turn out to me
Preheat the oven to 325°F (160°C) and oil to your pan so the cake does not stick
Combine the cake mix and pie filling(the mixture will be thick) Pour the batter evenly into the pan. I like my bundt pan. Bake for 20-22 minutes or until a wooden pick inserted into the center comes out clean(everyone's oven may cook differently)
Remove the pan from the oven and let it stand for 5 minutes. Remove the cakes from the pan and serve. If using topping, allow the cakes to cool before adding the topping. With my bundt pan, I like to put the frosting in the middle for everyone to frost as they please.

I love butter, too...but we do the original country crock a lot because of dairy allergies and it is dairy-free (and not $7 a container which a lot of the other fancier dairy-free butter alternatives are).
I never really thought about how margarine was dairy free until someone brought it up recently, a very interesting perception on an otherwise frowned upon product
