  • Onions are a staple the world over and are used in a staggeringly wide variety of dishes. You can cook them in wine, butter and shallots for a fancy French preparation, or get your fingers greasy by munching on some humble onion rings. It's hard to go wrong! But their high moisture content means that onions actually need some TLC once you get them home from the market. According to the National Onion Council and other onion-loving experts, different types of onions need to be stored in different ways, in fact. So, nope - you probably shouldn't just stick them in a bowl on the counter. Turns out, you've been storing onions wrong your entire life. Here's why.

      For fresh cilantro I put the bunch into a rocks glass (short 8 ounce glass) filled about halfway with filtered water, just like flowers in a vase. The I use a large Ziploc bag or plastic wrap and cover the tops to keep the leaves from drying out. It lasts three weeks or more that way.
      Also, for celery, rinse, then wrap the entire bunch in tin foil, completely. Reseal it after you take out any stalks. I've had celery stay crisp and only go limp after four or five weeks that way.

    I used to buy onions in bulk... 50# for $12.00 or so. My basement was full of nylons stuffed with them, and that would last me through winter.

    *DON'T* throw away onions when they sprout! The bulb part is no longer usable, but the shoots themselves are delightful!

      I have onions with green shoots. Is the body of the onion okay?? What can I do with these?

      @@SpaceCadet4Jesus _Occasionally_ the bulb/body of the onion is still okay to use once it puts out shoots, but more often than not that part has gone squishy and slimy and should be discarded. A gentle poke or squeeze should let you know.
      As for the green shoots, they are similar to less-delicate, more-intense scallions. Because the flavor is so strong, they're often better cooked with than eaten raw, though they can work beautifully in a chopped salad. When cooking them, I like to slice them in thin rounds and sauté them after whatever dish I'm making is almost done (as contrasted with the bulb of onion that you generally want to cook first and let get at least translucent if not caramelized). This preserves their color and texture as well as keeping their flavor more distinct.

    If you put an apple in with your potatoes the potatoes will not sprout so they stay usable for longer

    I store mine in an onion bag and hang the Bag in my pantry, they all last until spring. I do loose a few but not many, we grow about 40 lbs per year of all the ones you mention.

    Ok so I am probably the only one here that has never heard of slicing onions, slightly sautéing them and after they cool off put in ziplock baggies and store in the veggie bin in the fridge or put in the freezer until ready to use. Yeah I just admitted that 🙄🤦‍♀️😂🙃😊

    I remember my dad making braided strings of onions and hanging them up, and they kept just fine. I don't have that skill, but I hang up my net bag of onions and it seems to act the same way.

    I hang my onions in the cellar hanging in a nail in a rafter. If I cook steak I boil chopped onions , add milk when they're done & add butter, salt & pepper. They're really good.

    You don't need to throw out sprouting onions. They are not bad, moldy or rotten yet. Use them quickly but they won't harm you.

    Tips like these are really most helpful for those who enjoy detailed food storage already. Most people would benefit from simply buying fewer onions (you don't have to buy a whole bag at most stores), or using more of them if you like them. Storing them where you'll easily be able to grab them on an impulse will help you use them up and then they won't spoil.
    If I thought I had to do the nylon thing, I'd never buy onions again; the hassle of tying them like that would be an aversion and I'd use dried instead. I think most people would share that psychology. Long term storage tips were more relevant when people bought ahead when items were cheap and had to make them last. But 2021 onions are cheap and available year round. Maybe if there's a special breed you want to store?
    I store my onions fairly close to my potatoes, but there are no real consequences since I go through both rapidly.

      I love Vidalias! Fantastic RAW! I do the hose method with them. They are only available for a short period of time each year. So, I stock up.

      I'm not sure that would work if I intend to keep them for a year. They will rot wherever they touch within a month or so.

    Our onions, whether sweet or yellow sit in a wire mesh container on the kitchen counter. We don't stack them over 2 high, they last a good month. We're in Ft Lauderdale Fl it's hot all year so AC runs 24/7 kept between 75 at night to 78 day. If any onions sprout, we pot them for the scallions.

      @Space Cadet yes, the green sprouting part. Many times we get 2 to 3 new onion plants from one onion. Scallions are great in salads, sandwiches etc. We almost never buy them anymore.

    Easier solution: when your onions are about to go bad, make French onion soup or just sauté a bunch to eat with sausages or make an onion gravy for pork chops. Seriously, they're not expensive enough to be worth going to any trouble over.

      I try to only go to the grocery store once a month, or even less if I can. I even take the time to rinse fresh cilantro and then place it in a short glass jar filled with water (like flowers in a vase), and then I cover the top with plastic wrap and keep that on a shelf in my fridge for up to 3 weeks. If I was going to the store every other day like I used to, I would toss the $1.49 bunch of cilantro into the vegetable drawer of the fridge, unwashed, and then use what I could before it went brown and gooey in three or four days.
      You must have had a grandparent who lived through the great depression who did all this stuff to pinch every penny. There's other reasons people like to keep food fresher longer other than saving money.

      I love reading about how people made it through difficult times. Seasoning food so that it satisfies and relieves hunger was viral. Since we are expecting a food shortage I think it’s only prudent to have food storage.

    Serious note to men: before using panty hose for any handy purposes, make absolutely sure to loudly and repeatedly ask your current wife/girlfriend for her discarded panty hose and thank her repeatedly on several occasions for them. Hopefully, this will lodge in her mind that the panty hose you are using for onions, or in the garden to tie up tomato plants, are actually hers. Otherwise, the cost of dinners and presents will negate the utility of discarded panty hose. You stand forewarned. This is the type of wisdom all fathers should share with their sons.

    I have a Foodsaver and store them in Foodsaver bags with the air sucked out. Plus, I agree with the other comments that said don’t buy so many onions. The most I have at one time are two yellow, one white and one big red one.

      @@deborahsullivan9765 I understand. Where I am, onions take at least five months to grow in the field. Since onions are inexpensive in stores, I only grow more expensive things. I've grown onions and garlic. Neither were cost effective. If you have limited space, consider growing your favorite herbs. Herbs are HUGELY expensive in stores and require little space to grow.

    I usually buy three or four vidalias at a time wrap three of them in doubled paper towels - place each wrapped vidalia separately in asmall brown paper bag & store in vegetable tray in frig ... they stay firm & fresh & I haven't lost any in all the years storing them this way..

    I think that the best combination of onion and potato is in a sandwich. First boil and cool a potato, then slice it cross-wise into 1/4 inch slabs. Cut an onion in the same fashion. use whole wheat or white bread and slather the two slices with mayonnaise. Place a slice of onion and a slice of potato on the mayo side of the bread and cover with the other slice of bread. Um!

    I live in East Texas dental dishes the way I store my onions that works perfectly I get parchment paper and lay it out in my shipping container a long flat place and space the onion so they do not touch each other and put a box fan on them constantly blowing and all my onions last up to 6 to 7 months a few of them may be bad but 80 to 90% are fine for long-term storage even though the temperature inside that shipping container gets up to 100° in the summer

    If the onion starts getting mold. Is it OK to peel off the top layer and eat the other layers if they look fine?

      Yes. Clean the mold off and wash your hands before peeling so the inside is not contaminated.

    Another way, for longer storage, especially if you live in the desert, is to remove the outer skin and store in a container in the refrigerator, either whole, sliced or diced.

    I only buy a couple onions at a time leave them stored in a bowl on the kitchen counter, usually I only use a half an onion at a time, the other half I wrapped in tin foil and place it in a ziplock baggie and put it in the vegetable bin in the fridge.

    When you say that onions and potatoes shouldn't be stored near each other, how much space between them do they need? I store my potatoes in the pantry on the bottom shelf and the onions on the shelf above it. Is this enough distance?

    😆 😆 😆 😆...Been cooking for 40 yrs...I store my Onions in paper towels and a Ziplock Bag, in my Fridge...When i use the onion, throw the paper towel away, rewrap in paper towel...Onions always stay fresh until i use the whole onion up...never had a problem, 😆 😆 😆 😆, who are these ppl, with this (INFO)?

    Nope....I've been storing onions correctly my whole life. (And, it's a great reuse of old pantyhose) I don't cut the legs off however, I use the connecting fabric..... slinging one leg over a 2x4 on the garage wall.

    I keep a bag of potatoes in a plastic bucket in a small pantry and then dump a bag of onions on top. Guess that's a no-no. I thought they like each other staying quiet for a couple months. 🤷🤷

      They don't live in Wisconsin either. The ONLY time my Basement garage gets close to 45° is Early Spring & Late Autumn. Other than then it's either a "walk-in freezer" or a "sauna"

    I’ve been putting my onions I use the white ones and the ones with the yellow peel and the red in the federator they don’t mold they don’t grow eyes or nothing and they taste fine they keep saying it’s a health has it what kind of health has it I also put my garlic I’ve been fine

    No, not really. I don't store them near potatoes and they store just fine in my pantry for how long I keep them, given that I'm not growing them, so they only need to hang around for the time until I use one or two of them.

    4045 is not necessary much higher temperatures are just fine for dried onions no light and tons of ventilation is the most important as running produce warehouses my entire life you put them in the back you don't leave the lights on the fans on that's not because I didn't have refrigeration I cuz I had tons of it 45 250 is wrong but she probably didn't do that much researching she just trying to make a buck can't blame her she don't know what she's talking about

      Not everyone has access to land for that. Onions require many months, a lot of space to grow and are cheap to buy. I am an organic farmer. It is labor intensive and expensive. I am fortunate to have the space and finances to do it. Most folks have only a small area and limited time for gardening. I advise them to grow what they like that is expensive in stores. Particularly herbs. Don't be such a bully! If you are fortunate to have space, money and time, I'm happy for you. Don't be a jerk toward those less fortunate than you!

      Cut, vacuum pack and freeze. Of course, you won't use them raw. Just fine for cooking.

      @@tomorrowhowever7488 I don't have a vacuum pack, so I use zip-locs and a straw. Pack the onions in a zip-loc and close all but the corner. Stick the straw in the little open space and suck the air out. Works! Just DON"T blow out!

      I was thinking what you call the brown, we call the yellow and all yellows were sweet. The white is not sweet, nor is the red but both are called hot with the red a bit less. They make your eyes water when you cut them and taste like fire when you eat them raw. But this lady talks like the sweet ones are a separate deal again and first I ever heard of that business. My issue is that some yellows are much sweeter than others and the ones I normally get a hold of aren't very sweet at all. I scored a bag of vidalia, says so right on the bag and there hasn't been one in there any different than the standard bland yellow. I'm not very much impressed. It's probably like the red delicious apple - they've bred all the taste out of it for better keeping and I'll have to grow my own if I want actual flavor in my food.

      The issue isn’t whether I eat them raw or cooked. The issue is how long they DON’T last. If they would store for more than a week, then they might be worth their extra cost. They rot so quickly that they simply are not worth buying - even if they cost only half of what yellow onions cost. I can get sweet onions by buying yellow onions, and simply sprinkling them with sugar.
      That has been my experience, My best to you, and I wish you continued enjoyment of Visalia onions.
