School Cafeteria Pizza - Throwback to the 80s School Pizza Recipe! 😎 QUICK & EASY

  • I love school cafeteria pizza back in the 80s. The lunch ladies started doing something in the 90s that wasn't as great, but THIS recipe tastes spot on for how it was back in the 80s lunchrooms when I was in elementary and middle school. The recipe below is for a half-sheet pan.
    The secret ingredient is what does it!
    INGREDIENTS:
    1 cup warm water (105-115 degrees F)
    1 teaspoon sugar
    1 package active dry yeast
    1 teaspoon salt
    2 tablespoons olive oil
    3 cups all-purpose flour
    ¾ cup powdered milk
    1 cup pizza sauce
    1 cup shredded mozzarella cheese
    Toppings of your choice
    INSTRUCTIONS:
    1. In a large bowl, combine the warm water, sugar, and yeast. Let stand until the yeast is foamy.
    2. Add, olive oil, 2 cups of flour, salt, and the powdered milk. Stir or mix until a dough forms.
    3. Use a stand mixer or turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until the dough is smooth and elastic.
    4. Line the bottom of a half-sheet pan with parchment or sprinkle a light coating of corn meal. I prefer parchment!
    5. Place the dough in the pan and then press and roll it out until it spreads to all 4 corners of the pan. You'll probably want to let the dough rest for a few minutes first so it's easier to work with.
    6. Spread sauce, add cheese and desired toppings.
    7. Bake in a preheated oven at 400 degrees F for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. (The recipe I had said 20 minutes, but I find that's way too long in my oven.)
    Serve and enjoy!

    Been looking for this recipe for a long time now, and My Mom even worked in the school cafeteria for some years, but she couldn't remember it when I asked her for it. Class of '91 here, and YES, use to love the school pizza. And I must say, yours looks more like what I remembered over everyone elses here on CZcams.

      Me too!! Class of 83😊 LOL and the school pizza was the bomb!! No other pizza like it!! I do homemade pizza since 2004. People love it, however I'm glad she told us about the powered milk, so I have got to try it.I keep thinking milk could be and ingredient in a pizza at a particular Italian restaurant from my past, however, I didn't think powered milk, but I have been using powdered milk lately because it's cheaper than regular milk,"in other food"

    I'm on the low end of the Boomers,1962. I Loved school pizza and Yeast rolls. I graduated in 1980.

      Haha I'm pretty sure they were making it the same way right through the 70s and 80s. I'm pretty sure it was around 89-90 when they changed it to a narrow trapezoid shape with little square pepperoni bits. 1975 here!

    We love our pizza made this way! only thing is, being in my 7th decade on this beautiful earth, I have to line my pan with parchment, but roll it out on a silicone pad so it doesn't scoot around so much - i'd never get the thing rolled out any more if i didn't! then wrap around my rolling pin and lay it in the pan on the parchment. by the way, i still scoop my flour and it's all good.

      That's such a good idea about rolling out then wrapping around the rolling pin! I hadn't even thought of that! I know that's the way to do a pie crust so I don't know why it never dawned on me for rolling it out. THANK YOU!!!

    I went to school from 1978 to 1991....the 80's school lunches were the best. My kids miss out with the pre-packaged crap they serve today, they don't even cook on site anymore. I remember this pizza too...looks just like it. Great job. My favorite was Poor Boy Tacos. Basically Nacho Chips with beef chili on top and topped with shredded lettuce, tomato, and crumbly white cheese.

      Haha yes the 80s lunches were the best, for sure! I don't remember them serving nacho chips at my school, but if they had, I would have been a fan! I don't think they served tacos either. I wonder if maybe it was a regional thing? 🤔 I grew up in North Carolina.

    As a 90s kid, I still appreciate this recipe. In middle school, Fridays were called, “pizza Friday.” Then by high school pizza had its own line for every day, not just Fridays. Seems like we had cubed pepperoni as the one topping.

      That sounds about right! I think they were cheaping out by the 90s. I figure they could probably get an extra slice for each row by cutting it into those narrow trapezoids instead of the rectangles.

    I'm tail end of the boomers! Looks like it from the mid 70s! The one thing they added on top was a sprinkling of parmesan cheese. I loved pizza day!😊 Now I gotta go take frozen pizza dough out, LOL!! 😂

    I remember the pizzas in junior high, in those pizzas they had chunks of tomatoes they were awesome, your pizza looks very good👍

      GFS has rectangle pizzas with chunks of tomatoes in the sauce. I'm not a fan of the sauce myself but thought I would share that with you.

    I watched another recipe video that claimed the recipe came from a government cook book. Her crust poured into the pan, like pancake batter.

      Ok, well try that one and see what you think. I did mention in this video that some people use a recipe like that, but all I know is this tastes exactly like the pizza when I was in school.

      ​@@OldTimeKnowledge I did try that one, the pourable crust one...and it doesn't work. It's a very sticky dough that resists being spread. Tastes okay but I'm give this one here, yours, a try next.

      You know, the bottom never really seems to get brown with this. I'm not sure if it's because the crust is so thin or if it's because of the parchment or the pan I use. I use a pan by USA Steel. I suspect if I greased the pan before baking instead of using parchment, it might brown on the bottom, but it doesn't bother me like this. I may try it sometime like that, though, just to see... thanks for mentioning it!

    I'm starting to think that I'm the only 1 who hasn't eaten ''school cafeteria pizza'' : ( [cute-silly but sincere/true lol] It wasn't a ''thing'' at all where I grew up [Ontario, Canada] .... so, I'm going to make this : ) I have a feeling I'll like it ! My fav. Cafeteria food was Fries & Gravy - I know, sooo exciting - right ? [not] lol : )
    I have made your Gingerbread cake 2 x's & it was Delicious [will be making very soon again] as well as your chocolate & nut topped toffee, very good too - a lil' too Good ; ) !!!
    So Happy for You re; your new Stove : ) it is nice to get a new appliance etc ~

Please don't expect it to be like Domino's or Pizza Hut or anything like that. School pizza was always a very different thing. Definitely better than a storebought frozen pizza, but also not like your favorite local pizzeria. (Then again, is anybody's favorite local pizzeria Pizza Hut or Domino's?
