    the entire video is enchanting; it reminds me of my own family cooking a big dish, like stuffed cabbage, with everybody participating in some way but one person -- usually the matriarch aka abuela -- conducting the orchestra. in my culture, it's the Bubbie -- i'm the grandchild of immigrant Russian Jewish peasants -- but everything else is EXACTLY the same. i couldn't help but smile. :)

    This is exactly identical to west African food. Jollof rice is probably this meals ancestor. Served with fried plantain too..

    My mom always taught me to make sofrito from scratch it tastes better and it's much fresher and healthier than the high sodium/preservatives of the canned version. Regardless it looks great !

      Tito Torres my mother’s family is from the Canary Islands too, last name Barroso. I guess there are a lot of Cubans that Imigrated from there.

    Muchas Gracious Abuela! I live in OK and don’t get much variety of foreign cuisine. I tried Cuban food while in Miami and got hooked on it. I read where Arroz con Pollo was Ricky Ricardo’s favorite food. I wanted to try it so I followed Abuela’s recipe in this video. It’s now my family favorite. We make it all the time. It’s the only dish that I make where the leftovers are wiped out. Thanks again!

    soy cubano y cuando escucho ese acento tan cubano me trae maravillosos recuerdos de mi abuela en cuba cuando era nino en cuba y el olor tan maravilloso que salia de las cocinas cubanas que con respeto de otros cubanos aqui muy pocas veces mi olfato no lo ha sentido , las abuelas cubanas son las mejres del mundo

    I really LOVED seeing this and I particularly appreciated seeing 'tu abuela' making this wonderful dish because when I saw her, and heard you translating for her, I KNEW this was the REAL CUBAN DEAL! I will definitely try making this, but there's just one thing, and I'm sure I'll draw some fire for saying this, but I just MUST have the green olives in my Arroz con Pollo! Thanks to you and your grandma for this video gem! Go have some rum, you've earned it! And since grandma was wounded in action, a hug and extra rum for her! ;-)

      Hello, my family is from Canary Islands, Spain and we make this also. Actually we brought this to your island when we settled it long ago. We also brought ropa vieja, ajiaco (we call sancocho), gofio, mojo, carne con papa, flan/quesillo, and a whole bunch of other things. I was eating some of this today, that's what brought me here. This is one of my most favorite Spanish dishes. My mother makes it and puts in sofrito (fresh sofrito with onions included in it), chicken, rice, azafran, oregano, comino, bay leaf, chicken stock (chicken base or bouillon in water), white wine, fresh garlic, spanish paprika, pimentos, and peas. If we make paella instead of arroz con pollo, we add also white asparagus spears for garnish. We put a lemon wedge garnish on the plate too, for a nice finish. It's sooooo good. Ay dios mio

And yes, Cuban food is definitely derived from typical Spanish dishes since the Spanish are who settled on the island :D I was in the Canary Islands last year and I felt pretty at home there! Not only was it beautiful, but I could relate to all the delicious food!

      Yes, there is definitely shared culture between Spain and Cuba as well as ancestry, especially from Canary Islanders. Many Spanish Canary Islanders settled Cuba and influenced the culture and local Spanish dialect greatly. I feel like Cubans are our cousins because many of them descend from us, have the same surnames, and share lots of culture and tradition.
      I also found out that Guajiro music of Cuba was born from Canarian music, and so is punto Guajiro which Canarians living in Cuba created and then brought to Canarias and we have it as a local music form known as punto Cubano. Also, the Canary Islanders were the driving force in the cigar industry, they were called Vegueros. We brought Cuba many things, but also Canarians that settled Cuba and returned (other Spaniards did this too and are known as "Indianos" to us) they brought black beans and rice, cigars, guayaberas and mambo to us from Cuba and now that's a part of our culture because of it. Such a cool connection we have. It's like a two way exchange between our islands.
      Also, if you listen to Cuban Spanish and Canarian Spanish, they sound somewhat similar. Canary Islanders immigrated by the thousands to the Spanish speaking Caribbean, mainly Cuba. So there is definitely shared culture, tradition, food, dialect, etc between Cubans and Spanish Canary Islanders. Lol, it was so cool to learn the Cubans use the same word as us for a bus, la guagua, LOL.

    Hi Sam. I recently have been interested in cooking so I started watching recipes on youtube. Today I was just thinking that I'm getting so bored watching those professional looking like chefs when I bumped into your cooking Cuban videos & i find them awesome: Excellent recipes, funny, authentic & they give a real feeling about Cuban cooking.     Instead of amiga I should have said novia. I made this tonight, and it was delicious ! The only change I made was that I browned the thighs before adding them to the sofrito. I like the fact that the chicken comes out really tender. When I used whole pieces, the meat was never soft enough for me. When I was dating my Cuban girlfriend, and when I picked her up for a date, her father would always say, "No vengas tarade."

    I do agree you should do the sofrito from scratch the can stuff isn't the same. You should also brown the chicken first then add it to the pan to finish cooking it. But overall not a bad video.

    I'm Cuban (Santa Clara)our rice is not watery like that its fluffy removable it has the consistency of Chinese rice. I can see you used the short grain which is more sticky Puerto Ricans cook with tht, we use long grain but That's the art of cooking everyone is different😉

    I'm like Grandma. I pour liquid in can to use all I can after can't scrape no more. I don't like waste. I never thought of it in mixing raw. Nice. I wish I could make it like this, but I need to use pressure cooker. Maybe some day I buy the pot & try it this way. But I need only for 3 days, 3 people left overs for me, not 10. Is too much, though I could freeze half. I don't like that soupy way, but it does taste yummy I suppose.

    The only thing that I prefer, and I don’t know where I learned it, is using frozen peas instead of canned peas.
    Frozen peas are bright green, sweet, tasty and not overcooked if you incorporate them towards the very end.
    Canned peas, well they are mushy, old looking and taste like crap lol (so do the canned asparagus).
    But a good jarred/canned fire roasted red bell peppers, I prefer to the freshly chopped, go figure.

    Loved your video ! I used to have una amiga Cubana, so I love Cuban food. When I cook arroz con pollo, I add the rice to my sofrito and add enough liquid to just cover the rice - almost like the "one finger" method. How do I know how much rice to add when adding it to the liquid ? Some people say that if you have too much liquid, your rice will be too sticky.

      It’s more like cooking with a feeling. We don’t ever use exact measurements as you can probably tell, lol! Usually there is never an excess of liquid though because after cooking the chicken, a lot evaporates and we almost always have to add some chicken broth as the rice cooks.

      Beer is what most people use for arroz con pollo! It's also very tasty. My family uses the wine because it's not as watery and adds a bit more flavor (that's our opinion). Try it and let me know how it tastes :)

    Of Cuban extraction, I was born in Tampa, raised among Cubans who always used diced green pepper, onion, & garlic in arroz con pollo. The World famous Columbia Restaurant of Tampa have also included them for over a century. They have published their recipe on their website, along with other authentic Spanish/Cuban recipes. .

      I used to live in Tampa for 2 years, I loved it. I'm Spanish-American and there are quite a few Spanish-Americans there too, mainly in West Tampa living in the same area as the Cuban-Americans. I used to eat at the Columbia restaurant all the time. I know the owners, the Gonzmart family. I used to eat there regularly because I'm Spanish and they make Spanish food there. My family is from Canary Islands, Spain and we make both arroz con pollo and paella all the time. We also used diced onion, green pepper, and garlic too as the sofrito along with diced tomato. All fresh stuff.

      Yes, I agree. When I lived in Tampa, I would go there often. I like Ybor City in general because it's a little gem and my people, the Spaniards are represented there. I wish I would have joined the Spanish club there (now they moved to west Tampa, but the original Spanish club building is still in Ybor, El Centro Español), but I'm happy to have interacted with Spanish-Americans and Cuban-Americans in Tampa often and enjoyed our shared heritage. It was a good experience for me.

      I grew up in Tampa and remember El Centro Espanol well. Tampa was a great place to grow up,very cosmopolitan (the food, music, festivals, plays, revues) were spectacular and the yearly Florida State Fair was fabulous..included a world-class art museum,
      and Broadway musical revues! What a city!

      I love Tampa. I'm from the New Orleans area of Louisiana, and there are a community of Spaniards here, just like in Tampa. Florida has lots of Spanish heritage and culture imbedded in it. The very first settlement in the US is in Florida, in St. Augustine and has Spanish descendants there and culture. There is Spanish heritage spread out throughout Florida. But I especially enjoyed Tampa the most. My people are represented well in Tampa. I was invited to join the Spanish club and the Cuban club (my family once lived in Cuba for a few years after leaving Spain, but left for the US). I hope one day to get back to Tampa for a visit.

    i need a recipe for 10! if i prefer it a little less "a la chorrera," how can i prevent the rice from getting too watery? tips? thank you this was great im going to attempt this exact recipe

    juicy rice, arroz meloso
    just add some rabbit, leave the chicken on th bone and basically enjoy a paella ;-)
