  • The bacon, egg, and cheese sandwich is a quick, cheap, and delicious breakfast favorite. But how did it become a city staple? How long has bacon been the go-to morning protein? Is American cheese actually made of plastic? And whose idea was it to put three delicious ingredients together under one crispy roll?
In this episode, host Justin Dodd delves into the story behind this beloved sandwich.

My favorite breakfast sandwich is generally sausage, egg, and cheese, but when making it fresh, I tend to go for bacon. And possibly controversial topic....when making my own sandwich, I cook the egg fully on one side then flip it and turn off the heat while prepping the sandwich. I like runny to slightly runny yolks.

I like using my bacon in potato soup, and for that, I need something with plenty of fat. That way, it fries to proper crispness and the grease can then be mixed with flour to make a roux to thicken the soup.

Tudor's Buscuit World, a West Virginia staple, has my all-time breakfast sandwich.
The Duke. A gigantic, fluffy, buttery biscuit with bacon, egg, cheese, and a potato hashbrown on it.
I can never finish one in a single sitting, but it will eventually be eaten, every time.

Not a breakfast sandwich per se, but I hear there was a cafe in Santa Cruz that offered a breakfast called the "hangover special" which was a slice of pizza and a beer, both served at room temperature. I never explored it for myself, being an hour drive away in the Bay Area, but often replicated it at home.

In NYC it’s the Kaiser style almost everywhere. But one lesser known, almost a secret, is the Portuguese roll! I have only found it served in the SW CT area, but for me it is superior, and fresher.

UP Michigan features a dish favored by miners, the pasty (rhymes with nasty) contains ground beef, carrots (or rutabaga), diced onion and potatoes, all within a pastry shell. Salt, pepper, and gravy or catsup complete the dish. It was brought over by Cornwall immigrants who brought it into the mines as a lunch that would keep in their packs.

Both streaky and "back" bacon are common in the UK - both in smoked and "green" (unsmoked) varieties. Streaky is the cheap one because it's only about half meat, half fat. Back bacon is a bigger cut with a lot more meat - it's delicious! Mind, streaky can make a fine "sarnie", especially if it's cooked till it's crispy.
Hubby will happily eat cheese with egg, with or without bacon or ham (a common alternative to bacon), but I can't. I can have bacon and cheese, or bacon and egg, but cheese & egg - especially fried egg - makes me nauseous. I never used to be but my first pregnancy changed my taste for a whole load of ingredients and mixes of them. That "baby" has just turned 32 but I am still unable to eat or even be in the same room as certain foods!

My preferred cut of bacon is the leanest I can find, then I slow-cook it to melt out most of the remaining fat. When it gets anywhere from slightly crispy to slightly burnt, it’s just right. Then I drain all but a teaspoon of bacon fat, leaving just enough to coat the pan for cooking the eggs.

reminds me of smore chocolate cookie. any 1 ingredient could be just as good as all 3 and in some cases, better.
...a tasteless roll with chewy texture, a mild cheese with gelatinous quality, a very smokey and tender bacon, and a mild complementary seasoning is one of the few indulgent pieces where the combo is greater than the sum of its parts.
salt is good if the bacon isnt very salty, pepper if the cheese or smoky flavor is mild, and ketchup if you had covid/hate yourself or grew up with ketchup on everything. :3

I am so disappointed in my fantasy boyfriend, Justin, today.
I've actually lost a little bit of respect for him choosing fake-cheese as his preference.
Once I became an adult, I realized that cheddar cheese is the best cheese for most applications where fake-cheese is used routinely.
When my friends say the reason they choose fake cheeses (of different sorts: processed cheese, foods, Cheeze-Whiz, nacho cheese in a can, Kraft singles ---plastic wrapped in plastic, Velveeta...) for...say...cheeseburgers is because it melts and cheddar cheese doesn't melt.
I mean, yay for meltability! But to hell with flavor, not living on chemicals, and farmers sustainability. If the cheese you ate was 100% cheese and not processed cheese food, my niece, a dairy farmer in Connecticut, wouldn't have quarters where she makes no profit whatsoever. She wouldn't have to guess at the beginning of every quarter water. She was raising cows as a business or a hobby.
Also, in what universe do processed cheese lovers live where cheddar does not melt?
    🤷🏾‍♀️🤷🏾‍♀️🤷🏾‍♀️
I mean, I guess if meltability were my only factor in determining whether she is as good....
    NO! THIS IS INSANITY!
