There may be a slight explanation for this: at 0:46 the studio sound-proofing was cut off for some reason, and Bob later said that he heard his brother say “chicken”, so “turkey” was in his head as a potential answer. How he thought it would be the answer to all three questions remains a mystery 😂
He obviously couldn't filter it out under the pressure. He'd already shown his ability at family fortunes in the 'Famous Irishman' debacle in the first round.
Here's what I think happened: He had turkey on his mind because he heard chicken and also heard that his brother did well. So in his mind he's thinking "Ok, when the right question comes, say 'turkey'". With the beach question, he just blurts out 'turkey' which is the first thing on his mind. When the 2nd question arrives, he thinks 'ahh, here's the chicken question.', so he says 'turkey'. When the 3rd question hits, he realizes that he failed miserably and THIS is the chicken question, so he just laughs at his own failed attempt to cheat while saying 'turkey'. At this point he can't really concentrate and pretty much knows all is lost.

I can't watch this without degenerating into a dribbling mess through uncontrollable laughter. In my opinion it's the funniest thing to have ever been shown on television. The point that the camera pans around to the guy's disgruntled family knocked me off my sofa the first time I saw it.
That is just one of the many, many slip-ups that Max Bygraves (host) did during his two series of Family Fortunes. He was hired by the makers, Central TV, as a replacement for the original host, Bob Monkhouse, simply because Max was a famous celebrity (though a singer, not a presenter).
He later explained that he meant to say Turkish Towel to Q1 but it came out wrong. He realised how ridiculous he'd sounded but then had Turkey on the brain, as it were, for Q2 and Q3. Bless!
