  • Pancake Day, also known as Shrove Tuesday, has a rich history that dates back to the Middle Ages. It is the day before Ash Wednesday and is celebrated in some countries by consuming pancakes. This day marks the last day before the liturgical season of Lent, characterized by 40 days of fasting, prayer, and penance leading up to Easter Sunday.
    The tradition of eating pancakes on Shrove Tuesday is thought to have originated as a way to use up rich foods, like eggs, milk, and sugar, before the fasting season of Lent. During Lent, Christians would fast from certain types of food, including those considered luxurious or indulgent. Making pancakes was an efficient way to use these ingredients so they wouldn't go to waste during the 40 days of Lent.
    "Shrove" comes from the old Middle English word "shrive," which means to absolve. This day was traditionally seen as a time for confession and absolution before the beginning of Lent.
    The pancake-making tradition is most closely associated with countries like the United Kingdom, Ireland, Australia, and Canada. The pancake has become synonymous with the day due to the widespread custom of pancake making and eating.
    An interesting and fun tradition associated with Pancake Day is the pancake race, which is believed to have originated in Olney, England, in 1445. The race involves participants running while flipping pancakes in a pan. According to legend, the tradition was born when a woman, hearing the shriving bell signaling the start of the service, rushed to the church while still cooking pancakes.
    Pancake Day has evolved over the centuries from a religious observance to a community celebration, featuring activities like pancake breakfasts, flipping contests, and other festivities. Despite these changes, the day retains its original purpose of preparing for the solemn period of Lent and is a cherished tradition in many parts of the world.
    Primarily, this recipe is English and eaten all over Britain - Scottish pancakes are more like the American style. Fluffy, using a raising agent. Eaten in Scotland. I hope this explanation explains why I call these British pancakes and not just English.

    My mother made pancakes like that, thin, rolled up, and garnished with butter, sugar, and lemon juice.

    On special occasions we would serve these with a thickened fruit compote (blueberries, cherries, strawberries, raspberries, apples etc.), finished off with a generous dollop of whipped cream.

      You can get handheld electric mixers. I use one. Take out the beaters, and keep it in a cupboard, use with a high-sided bowl.

    Many many years ago i got sick of the thick pancakes people liked so much here. I like the thin ones. They seem to taste better. So i started making them just like you are doing. I never realized i was making british pancakes. I was just making them the way i thought they should be. I do add a little butter on each one as it finishes cooking. I love butter on them. Next time i make them and my kids ask why they are so thin i will tell them they are british pancakes. I havent tried them with lemon juice. Some lemon juice and a little powdered sugar (granulated sugar is too gritty) and some butter would be perfect.

    Pancakes are really popular in South Africa. You can get them at any church bazaar as well as most supermarkets, boot sales and even markets. I might have a go tomorrow if the electricity is on for a change.

      I lived there for 11 years until 1977 It was a better place back then (never had issues with electricity or water) we also used to have this type of flat pancakes every now and then with sugar lemon or jam and a little sprinkle of cinnamon

    I use a simple measurement system which is ideal for 1 person to do several pancakes. Just get a standard cup, and do a cup of flour, a cup of milk, 1 egg and a pinch of salt.

    My Welsh Grandmother and other's in Wales 60 odd years ago added currants or sultanas to the pancake after pouring into the frying pan so that they laid on top of the batter while cooking and then flipped them over to cook on the other side. When taken out of the pan and placed on a plate while still hot, she would then squeeze fresh lemon juice and sugar over them. Absolutely delicious. Thank you for your recipes I love old fashioned British cooking.

      Never tried that. I've always had only lemon juice and sugar on my pancakes. However, every day is a schoolday, so I'll add some sultanas next time I make a batch.

    Pancake tradition is also here in New Zealand. I agree, they're just lovely with a lemon from our tree and sugar. Pikelets include baking powder and rise fluffy, (they can be eaten hot or cold, very versatile). Topped with mixed fruit is delicious. Looks like pancakes for breakfast over the weekend. Thanks Rik.

    These are similar to the ones I’ve had in Holland in the pancake houses. They serve them flat with a million toppings offered. Most popular are bacon & or cheese. So yummy!

    I’m from S Louisiana (Bayou); this 8:01 is exactly how my Maw-Maw taught me to make pancakes. closer to a crepe. I serve with a fruit compote or cane sugar syrup.
    Also in LA we eat King Cake (oval brioche w/sugar glaze) (puff pastry w/almond paste) Epiphany to Mardi Gras (Shrove Tuesday).

    My family is 3/4 British on both sides. Those are the pacakes of my finest childhood memories. My mom's recipe. She called them Swedish Pancakes. A sacred thing to us❤🎉🇺🇲butter and strawberry jam

    Thanks for this recipe!! My mother used to make this the traditional way for a hurried breakfast, stuffed with grated coconut and dry fruits when she had time and an Indian version with onions,green chillies, cumin and coriander leaves

    We have the same in South Africa, but usually serve it with cinnamon and sugar. My mother also added nutmeg to the batter. Always used to eat it when it rained (back then rain was rare, not like now).

    Yum. I love crepes so these thin light pancakes are right up my alley. I've never had pancakes with lemon, but am ready to try something different. I live in the states, and here I'm used to eating thick pancakes with maple syrup. I even add chocolate chips in the batter occasionally when I'm in a chocolate mood.     I sprinkle far more sugar and dribble more lemon juice. Golden syrup gets it's own pancake. I do love apricot jam on mine. My pancakes are British I'm South African.

    Morning Rik, I am so glad you mentioned the first pancake was always rubbish ,mine always are so I end up eating it while the second one is cooking but why is that ? We have them with sugar & lemon ,syrup optional ❤

      Good morning! Mostly we haven't got used to the pan temperature it happens to the majority or people. There will be others say it never happens to them! A pancake is about controlling the heat in the pan. You know by now I say it as it is - no fluff on this channel. Best, Rik

    Oh wow, the lemon juice! Will have to try that. Most cultures have their versions of this. Swedish pancakes-sprinkle sugar and cinnamon. My Ukrainian-Canadian mum made cheese rolls. A cottage cheese/egg mixture spread over crepe rolled, placed in baking dish and baked. Then sliced into bite size pieces. When we would come home from school and she was making cheese rolls (naleshnekea) she would let us sprinkle sugar on the crepe, roll and eat. What a treat!

    Yumm - a very similar to my handed down recipe but I don't turn them until the batter bubbles. This gives them a delicious crunch😋 When all our kids were home we ate them for lunches as they cooked - fresh lemon and a sprinkle of sugar every time.

    If you make very thin you can serve with cheese sauce or chicken in white sauce or even salmon with asparagus

    Never have lumps in mine, adding the milk a little at a time. For small amounts one egg. Never add melted butter. Always use a little lard to grease the pan as butter is quick to burn.

    Delicious 😋 We make ours much the same way. I like to save a few and slice up some cheese, put onto one half of the pancake, a few spoons of baked beans & maybe some ham. I fold the pancakes or pancakes and heat until hot & the Cheese melted, add salt & done. It might be blasphemous to some, but that's my take on a more savory pancake.👍😋

    Just been talking about Pancake day with my son yesterday.. in Germany we do them once and again during the year, will say, no special occasion like in GB 🇬🇧 we use either a sugar-cinnamon mix or ice cream or applesauce 😊😋

    So good to see this - I really don't like N. American style pancakes. I our house my Dad was the pancake cooker and sugar/lemon juice was our topping of choice. Must give these a try. Thanks!

    Hi Ric. I would just like to say you have got me back in the kitchen. I’ve retired now and it’s nice to be able to get in there more. My poor husband has put on over half a stone….ive brought a book so I can write your recipes down in. Never realised you have such a large and varied playlist. Please keep it up. There is one thing my mum made and if you have a recipe for that I would like to see you make it. It was a pork cheese. It had chunks of meat in not like you would see where it’s been minced to an inch of its life. Anyway Ric I love all your work and look forward to your next download.

      @@BackyardChef HI Ric, all I can remember was she put pork hocks in a large saucepan all with its trotters. Like they did in those day boiled the hell out of it. When it was falling off the bones she took then out and chopped the meat into chunks after removing the skin . We didn’t mind the gristly bits as we all enjoyed that part. I know not everyone’s cup of tea but it was ours lol. She then put it back into the water / stock it was cooked in and boiled it again to reduce the liquid. After that it was but into a basin , weighted done with a saucer and left to cool and placed in fridge to firm up. It was served in wedges with malt vinegar chips . I don’t know if she put and flavourings in with the cooking water. She didn’t use those sort of things. A very plain but tasteful cook my mum was. I think the only spices she had in the cupboard was salt, pepper and gravy salt. I have tried to make it as my husband loves brawn which around here is minced god knows what. But I just can’t get it like hers. Perhaps the saying no one cooks better than your mum is true. Anyway hope this helps. I’ve introduced my brother to your channel and shared recipes to my mates. You are such a down to earth chef and I look forward to your vlogs. I follow John Kirkwood on you tube and like you is a straight forward , no nonsense person. He has written cookbooks which know sit in my bookcase. If ever you go down that route there is plenty of space on the shelf for them. If there wasn’t I would certainly make space.     You probably wouldn't like what I normally put in my 'British' pancakes... (even though my mum is Dutch and she made this style pancake, saying they were 'Dutch'). Being an Aussie I have them like your filling too but I crank mine to have various fillings... smeared Vegemite and honey (don't knock it till you try it) or ketchup, or just thin strips of bacon (quickly fried) with maple syrup.

    Happy memories of many Shrove Tuesdays/Pancake days.
    Tomorrow ill have savoury; ham, cheese and tomatoe,
    Chocolate, banana and peanut butter but thebest fir me us always ending with sugar and lemon.

    Yes the first pancake is for the doggie. I use whole meal flour mixed with white and a cast iron skillet. It’s very like a crepe it a Swedish pancake

    That is fascinating about the roots of the humble pancake- I go a bit posh on shove Tuesday I call them crepes 😂 o purchased a crepe plate it makes them perfect although it takes Practice using the T swivel thingy.
    Ric is it on your list of makes in the future to make pork pies with jelly in the pies. I feel as time has passed there doesn’t seem to be any tasty ones with a nice layer of jelly. I would really love to know how with your tips and tricks.
    Do your first one turn out good- by the 3 rd one they seem to be better.

      @BackyardChef Oh, thank you so much! I have a multi-use 11" pan that should work pretty nicely, then. (Coincidentally, I recently bought it, not only to stovetop braise or use it in the oven, but also to double my pancake-making capacity to 4 at once.🥞 I make American-style pancakes, and like to experiment with different grain, seed, and nut flours - oat, millet, sorghum, teff, flax, chia, almond, hazlenut, pecan, even coconut - served with different types of honey or maple syrup to sweeten. They often turn out more dense and hearty than fluffy, and that's OK with me!) I've never tried the English style of pancake before. Looking forward to it!

    I learned about British pancakes during lockdown. I met a Yorkshireman on Tinder… don’t judge me too hard haha. We had video meals together. We’d pick something and make it. It was pancakes for his breakfast/my dinner(I’m in Canada) one night and I was confused, because I thought he made crepes
