First he fakes the mounted triangle, then he makes you think he is going for an armbar, then when you are defending the armbar, he transitions into a triangle. If you do not defend the mounted triangle, he goes for the mounted triangle. If you do not defend the armbar, he goes for the armbar.
My favourite subs are the Korean zombie twister how quickly and easily he set up a twister which is one of the hardest subs to get on an opponent because of the time it takes to set up. And the JJ standing choke, just dropping lyoto's lifeless body to the ground was fucking savage, like the be standing and choking someone out is just fucking wild and at the time they were my 2 fav fighters.
The submission are really underrated in the public of MMA , but they dope. Olivieira do those in a way , I mean that man does it so effortlessly & fluidly...

It's not the submissions, it's the build up to the submission. If you look at Khabib's fulcrum choke, it's ugly as sh*t and really easy. Not a skillfull choke and doesn't require any setups. But that doesn't make it bad. Diaz's choke was pretty average. Not a "top submission", but the buildup to it was insane.

Your research is wrong. 7:34 isn't a toehold. It's a reverse calf slicer. For a toehold you need a different kind of leg entanglement and you actually need to hold the toes. You do a grip somewhat similar to a kimura and then you use that grip to twist the foot. Here he clearly grips around the waist. So no toehold. Instead he has the lower part of his leg behind his opponents knee. And then he grips him and puls him back and because his opponent has his foot stuck Olivera presses his shin into his opponents calf, which is really painful.
