I don't think that I had heard this done before either. It makes me think of the finale of Vierne's first organ symphony where there are some notes to be played under the trills in the right hand but, yeah, this is another step further. Despite what some would suggest about historical fingerings, I think that Bach would approve of anyone who can do this; let's be honest, it works very well. Looks like it's time for me to upgrade my technique!

It's obviously challenging, in a sense that everything is challenging on a organ. I have never heard anyone not being able to play it though, but I always listen to Marie-Claire Alain, and organists like her as well as the ones from NBS are among the best and will undoubtedly execute things like this

I think it must be said that the type of organ Bach played/composed/practiced on was not the calibre of this one in the video. I think Bach composed specifically for organs that he could not play in his time and also for organs of the future. In this sense I believe Bach was a futurist. He knew in time there would be organs with 4-5 manuals and 32 sub-bass pedal pipes. And it’s why today his music seems so “modern”. But then again, just a theory.

The organ is the Müller organ in the Walloon Church in Amsterdam from 1734, so completed when Bach was alive. Müller was a pupil of Schnitger from Hamburg, whom Bach greatly admired, and on whose organs he played while visiting Hamburg.
