I've never cooked skirt steak because I've been told that it's a really tough piece of meat. But after my mother had grilled some for the holidays, her skirt steak turned out to be really tender and flavorful. She cooked it on a very hot grill and sliced it across the grain.
About a month later, I tried to cook some skirt steak also. To my extreme disappointment, it turned out very tough and chewy. I cooked it on an indoor grill set to sear and it was not overcooked at all. I don't know what I did wrong but it made me refrain from buying it again!
Need to learn to recognize meat quality by sight. Then only get decent or better cuts.
Could be the marinade, she might have incorporated ingredients that helps tenderize
You also have to cook it to medium. Rare doesn't work for that cut. Its tough that way .
There are two types of skirt steak, and one is tougher (and cheaper) than the other. Your mom may have had the good kind: the “outside” skirt. A good butcher should be able to sell you the right one.

Look up the two different cuts of "skirt steak"...(inner and outer), also known as Hanger Steaks. The one in this video is the one you want, the other cut is OK too, but some say it doesn't have as much flavor. plus it is shaped differntly. Ask a butcher. And another thing to consider is that they can be hard to find as there are just a small amount of meat per cow, perhaps 20 or so ozs. each. Best flavor and texture is medium rare!
