  • Don't be fooled by "whole-grain" products such as whole wheat flour (or bread made from it), which have a glycemic index nearly as high as that of refined flour. Grains that have been pulverized into flour, whether "whole" or not, have a significantly expanded starchy surface area available to digestive enzymes, and cause blood sugar levels to spike dramatically. A serving of true whole grains - embellished or plain - makes a healthy side for almost any meal, but they are also wonderful in soups, stews, salads and stuffings. Whole grains - full of protein, fiber, vitamins, minerals and low-glycemic carbohydrates - are an important part of the Anti-Inflammatory Food Pyramid.

    Trader Joe's sells a nifty 7 Grain Sprouted bread just in case anyone is looking for a sprouted grain bread. Ezekiel (Food for Life) is also a nice option...a bit more expensive than the TJ's but something to consider if you *must* have bread.

    Missing a fundamental about flours. It is the modern milling process, versus stone ground flours. BIG difference

      Yep. I hate it when people lump all flour into one category. I have noticed much more satiety with fresh milled flour

    Growing up in Europe, being used to whole grain hot cereals ( in Russian Kasha) ofMillet, Buckweat, Brown rice, as I remember growing up, we had more fresh, or canned with olive oil fish, than meat or poultry. We had desserts only on special occasions, never snacked and walked to stores, work, concerts, relatives and friends- everywhere. Having NO Fast food restaurants, or pre-packaged meals, We cooked our meals from scratch every day, bringing fresh produce from markets. And that’s why Europeans were healthier and didn’t have to worry about obesity and lack of exercise. Now, when I visit Europe, I see obese, sick looking people, and there are many of them. MacDonalds and other fast food heavens are everywhere. The shelves of Food stores are full of junk, just like in the US. It’s sad.

    Other countries eat a lot of bread: France, Italy, Greece, etc. And they have better health than us here in the US. Why??

      High fat diet ! They don’t use semi- dwarf wheat or high fructose corn syrup. The high carb diet based on the rubbish USDA food pyramid is another uncontrolled experiment with disastrous results ! There is absolutely no need for carbohydrates in the human diet.

      Thales Nemo Stop with the damn food pyramid. Americans have never eaten a high carbohydrate high fiber diet. There is no need for animal fat and refined vegetable oils in the diet, even the "healthy" ones like coconut and olive oil. Americans have never based their diets on whole food carbs like oats, barley, millet, buckwheat, rye, lentils, beans, and plain boiled or baked potatoes without the oil and fat. The SAD diet has always been a high fat, high protein, high refined carb diet. Plain organic whole wheat that has not been poisoned with sugar or preservatives is a health food if one tolerates it.

      My theory is Americans do everything on their butts and snack between meals. America would be a lot thinner if they walked around more and waited until mealtime to consume calories. It’s near impossible though. With minimal transit options, you have to drive everywhere. And, processed food in America is poorly regulated so manufacturers modify the food to make it addictive. It’s lose lose until voters make demands.

      yeah, but it about a portion size. Ask any of them how much croissant a day? Its probably once a week, where in US, well, you know..Also, I’m from Croatia, we are thin, but bucz prices are rising people are starting to eat bad bucz they can’t afford better

      All grains are anti-nutrients! No grains, no potatoes,fruits and sugars lost 40 lbs (18 kg) and maintained it for over three years!

      I literally eat the exact opposite of you, LOL. Compare the nutrition of 1,000 calories of whole grains with 1,000 calories of any animal fat, oilve oil and coconut coconut oil, and you'll see that the oil and fat has almost zero vitamins and minrrals. Olive oil has Vitamin E, and that's it. Butter has Vitamin A and calcium, and that's it. Coconut oil has zero vitamins and minerals. Whole grains have everything you need except Vitamins A, C, and K. Potatoes and sweet potatoes have everything you need except Vitamin K.

    Andrew, if you didn't eat so much fat and meat, your body would have normal insulin resistance and you could handle a few slices of whole wheat bread like a healthy person. Instead, you're describing symptoms of metabolic syndrome. So cut the fat, the meat, and get some exercise.

      allencrider you can live using multiple diets. Including a diet high in fats and proteins, or a vegan, or vegetarian, or paleo. As long as you cut out processed shit and sugar.
