    I think that making a moonshine out of birch sap is the best way to preserve it ;-) But your method is also well known. It's the best slavic warriors' drink.

      @@MrTurretless You can add sugar and yeast, or you can achieve the fermentation process by the use of natural glucose that the birch sap contains. The second option is much more difficult, but not impossible.

    I can only add my amazement at your bottle to bottle pouring skills. Another lesson in survival, steady hands, focus, and try not to hurry the process. Me, I would have had it running down the outside of both bottles and probably all over the table.

      @@SurvivalRussia Quite right Lars, but surving the corrupution of aging succesfully says that shaky hands can practice using a funnel for liquid transfers, even one such as you made out of stiff paper. Being able to adapt old practices is the key to surviving many things that we once learned but which can end up creating a mess as we grow older. Boss sounds great and his bark reminds me of a long departed friend of similar size.

      LMAO passerby. I thought that too.
      Today I was pouring a beer from a bottle to an empty cola can cuz I needed a beer can for beer can chicken but only had a bottle of beer so I drank the cola and opened the beer and poured it into the cola can...... you still with me?....good. So whilst I poured the beer into the can I was thinking... don't spill it... don't spill it.. and I didn't spill a drop.... alcohol is precious. Lars didn't spill any because he was thinking beer. He was pouring beer and did not want to waste any.

      Make a small hole in tree with cordless drill (it has to bee fairly deep. 50-100mm will do), and tightly insert a dropper for Intravenous therapy (if you want your sap to be really clean) or any small tube that can be tightly inserted in that hole. Put other end of dropper (or tube) into your bottle.

    You are fermenting the birch sap. I fermented birch sap a couple of years ago. I did't use sugar and I had less fruits in it. It had a bit of a sour taste to it when it was done. I liked it. I don't think there were any alchohol in it.

    Koreans, and natives of far east asia, collect sap from many different trees and shrubs... beside the sugar and minerals, but also for medicine from saps considered “undesirable” in the West (obviously taken in low doses). I like this kvass method to preserve it, rather than boiling down! Birch sap is high in Xylose thus doesn’t ferment (i think?) to make a high alcohol..

    I can't remember the video offhand where you were in the forest and you tap the birch tree for later use at the campsite but I've never had it fermented with raisins I bet you it would taste great with some pancakes and oatmeal

      You should not take more than 3-5 liters per tree, if you ant to be kind :)

      @@SurvivalRussia thanks for the extra info. I've never seen an amount to stop at and have always tapped them and collected the sap without noticable harm to these trees. I'll be amending my process taking this into account to be more gentle on them

    The Native Indians here in America tapped Birch trees too for their sap as well. The Birch tree is a very valuable resource in the wild! Thank you for posting this! Never knew about this technique for preserving the sap!

    Wine back in the really old days was often used as a preservative for water. It was very diluted and weak, almost like this, but the fermentation kept the water from gong bad.

    There's a mint-flavoured birch sap drink in the ethnic section. It's good on its own already, but of course it goes even better with spirits, like a mild gin.

    Cool. Never seen anything done with birch sap before other than making syrup from it. Of course birch syrup making is really a pain and more trouble than what it's worth given you need more than twice the volume of birch sap (about 80-100 gals) compared to that of maple sap.

    Lars, just a suggestion for next winter.
    My grandpa used to make a homemade airlock by drilling the bottle cap and threading some clear tubing turned into a loop filled with water as it makes it much easier to ferment stuff also, you can always just put a big baloon over the bottle mouth and secure it in place with some string just make sure to wash the baloon first so the powder inside don't spoil your drink.
    Anybody who makes Kvass in a warm home has blown up some bottles for sure haha

    Hi Lars, birch sap makes an excellent syrup just like the Canadian maple syrup but to buy it is more expensive. It also makes a lovely wine. I saw a recipe in a women's institute wine making book which uses raisins and oranges. My family did make some years ago. Your health, regards- J D.

People think they are doing something by joining certain groups on the net. I don't think people will accept this forever though. There are also growing anger in France. People in Russia are not that happy either.

      In any russian shop/market you can ask for Birch juice ( Beryozovi sok ), although beware that it won't be the same as what Lars has, but you'll get some idea about it.

    2. If I keep in fridge can I move it later
    3. After I open it can I leave it sit if so how long after opening
    4. How long does it take and how long does it last for?

      If the bottle becomes inflated, you should be OK. Just taste it and see. It will be a little "murky" but taste nice.
      You should just keep it cool.
      I have no idea about how long it will last, but it should last at least for 5-6 months.
      You just have experiment :) Soon it will be season again.

    Lars, we don't have birch trees here, other than those in private yards. Looks like a good drink. I'm surprised that some distillery hasn't figured out how to mass produce and market the fermented birch sap.

      You can make moonshine from it, using it instead of water. That's is an entire different thing though. This will have maybe 0,5% alc. Even kids can drink it.

    The yellow raisins and dried apples likely have sulfur dioxide on them to keep their color, which might affect the chemistry of what you are making. The sugar and yeast/must on the raisins should give it enough yeast to ferment though. I thought kvass had to have rye bread in it but I'm not in charge of that department. Cool videos!

    I remember years ago the health guru's warned about reusing plastic single use water bottles as they will quickly begin to leak toxic chemicals like Bisphenol A (BPA) and many other unhealthy chemicals from the plastic after being reused. I am not an expert but it may be a good idea to store the otherwise very healthy birch sap drink in a different type of container, just to be on the safe side.

      J F :- Most of the plastics are safe to use today. The only real problem is micro-plastic particles getting into the water or food, but clean & undamaged plastic bottles should be relatively safe.

    We have an old timey soft drink here called birch beer, I'd wager it's origins are similar although now in modern times i doubt it actually contains birch sap or oil anymore just artificial flavor and corn syrup :(. I'll bet yours is better.

    Hi Lars, do you have a proven recipe for a rye bread kvass? I tried one from a cookbook I have with mixed success. It included raisins as well but also said to add small pieces of lemon - in the end I got a lemonade, very little bread taste, but a lot of lemon taste. I brewed it in the Grolsch beer bottles that I hoarded (those with snap-on caps) but either the recipe specified too much yeast or I did something wrong - when opening a bottle, even well-chilled, almost half of the concoction went puff! into the air and was lost. What remained in the bottle was quite tasty and definitely had a bit too much alcohol for a soft drink, but I was dissapointed that it didn't taste like bread at all.
    You can buy some imported Belarussian, Ukrainian or Russian kvass over here occasionally, but these are industrial brewery products, probably unlike the true home-made kvass that I never had a chance to taste. That's why I tried to make some myself. I would try again if I had a good recipe.

    I'm really curious how it tastes.
    Birch sap just isn't a thing in UK...
    I guess I'll need to see if you have a video on how to tap it (pretty sure you do), and then go first myself a tree...
    /me looks out of window at silver birch across the road...
    (Hmmm... street lights switch off at 1am...)

      Steve Evans Well, optimally you want to find a tree that’s not too close to a road. Because the quality may be compromised due to pollution from all the traffic. Though, if there aren’t that many cars passing and if you can’t find any other Birch trees nearby, then go for it :)

    Get some of those hallucinating mushroom from your lawn, cut them in small, mix them into a cup of sap and give it to the dragon:))) The dragon will be VERY cooperating and on a happy "trip" after and you can then make her do the lawn cutting, clean all the buildings etc. You just have to give her more and more sap with mushrooms!
