Ingredients and Measurements:
1/4 cup oil (you can adjust this to the amount of eggplant used)
2 medium onions chopped
2 tbsp. green seasoning
8 cloves garlic crushed
6 wiri wiri peppers crushed (adjust to taste)
3 plum tomatoes chopped
3 scallions chopped
4-5 large eggplants/baigan/balanjay
3-4 small potatoes sliced (you can use as much as you would like)

I use the regular ones for this. I like using the thin Japanese ones though.
