8:30 isn't technically the truth, it's just plain true. Pizza made with minimally processed ingredients and on a whole wheat crust? That's genuinely healthy. And the mozzarella is easier to make than you'd think; but it's not aged, so I assume that the person texting that either doesn't know (most people don't) or is using something else, either instead or in addition.
I'm going to make some homemade mozzarella and tomato sauce and use it to make a pizza next weekend. Bell peppers, onion, honey ham, sliced garlic, green onion, mushrooms, artichoke, and grass fed ground beef. One of my favorite pizzas and it's actually pretty dang healthy and a lot less expensive than it sounds. Especially if served with homemade Caesar salad. The original Caesar salad dressing is actually very simple and very hearty healthy: Anchovy paste, Dijon mustard, minced garlic, a squeeze of lime juice, crushed black pepper and shaved Parmesan cheese. I learned to make it tableside when I was learning to be a professional Waiter.
The mozzarella is pretty easy and quick, but homemade tomato sauce from scratch takes all freaking day. Fortunately, I'm in between jobs and have the time for it. Bon appétit, ami. 😘👍
