    1 tablespoon cumin seeds
    1 teaspoon coriander seeds
    1 tablespoon fennel seeds (saunf)
    4 dried red chillies

    Method:
    1. Dry roast cumin seeds, coriander seeds, and bay leaves in a pan until they turn fragrant. Transfer to a plate and allow to cool.
    2. In the same pan, add fennel seeds, green cardamoms, and dried red chillies. Roast until fragrant. Transfer to the same plate and allow to cool.
    3. Put the roasted spices in a mixer jar and grind to a fine powder.
    4. Transfer the masala into a jar. Use as required.
