SWF Smoked Deer Leg

  • I thought it was time to do another Bonus cooking video. We have a short summer in Sweden so i take advantage of the weather and smoke as often as possible. In this video we are smoking a Roe Deer leg. Roe deer are a small member of the Deer family. They are very good table quality. I find the Roe to be milder than a White Tail. Because of this I didn't want to do too much to take away from the flavor of the meat. I decided that I woud do saltbrine injection. Let the meat rest overnite and the following day I smoked the meat at 110C (230F) until it reached an internal temperature of 65C (149F). I used a wireless meat thermometer with an alarm to make sure i took the leg out at the correct temp. Once removed from the smoker I wrapped the leg in foil and let it rest for a couple of hours before returning it to the refrigerator. As I mentioned in the video, I smoked this leg for a work friend and while I was not able to sample this leg he told me it was amzing. Cooked perfectly and still moist.     Ingredients;
    Low sodium salt cooked in water for the Brine
    A good consistent heat smoker.
