      It's an acquired taste. I am Chinese and I never liked bamboo shoots - and if I eat ramen I always say "no menma" (pickled bamboo shoots)

      Menma tastes funky because of the pickling/fermentation... But fresh bamboo shoots taste very refreshing, the kind of taste you would expect from a stem vegetable, and with a very crunchy texture. I like it very much.

      @@Laev1gata true the crunchiness is nice but there is an inherent pungent aroma coming from bamboo shoots, fresh or pickled. I have eaten it during my childhood and never liked it - after I go out of my parents house I never want to eat it again.

      @koreander sim Being a professional chef doesn’t mean they would have to cook on a greater scale? Some people hire home-chefs, or some people sell what they make from home. They don’t have to work at a restaurant or diner, ect.
      I also don’t think someone asking a question is “pushing” the other person to go that route, it’s likely meant to be a compliment.

      @@MinToni90 From my perspective, compliments like this can spark ideas of turning hobbies into profession. Unfortunately the commercial and corporate world had turned jobs into very tiresome, undesirable chore for most of us, which is often why many are advised to not take hobbies into their profession, because once they get that burnout, they cannot let go simply because it's work, and it no longer brings the joy of investing time, skill and emotions into it personally.

      @@yasumitodaka1013 It takes more than a few comments/compliments from people to push someone to turn their hobby into a profession they have no desire for. It’s extremely difficult to make it into any field, it requires commitment which usually comes from the desire to make monetary gain from it, and more than anything, a love for the craft. Far more people go into jobs they have no love for simply to make ends meet, because people always told them their hobbies and interests will never get them anywhere “in the real world”. So I disagree.

      @@belphegren2062 I’m sure you will like it if you like soup. I like using 冬笋(literally translate to “winter bamboo” and are only available during winter), it tends to make the soup to have a hint of “sweetness” and brings out the Umami flavors from the meats (and is crunchy). My home town region even have a braised bamboo dish (which is also my fave. Guess my love for bamboo is strong 😂)

    Would love to see animations of the characters making their signature dishes in a way that is tied to their personalities or stories. Example, Razer not knowing how to act while on camera and talking about some goofy stuff on how he rummaged in the wild for his ingredients. Or Zhongli being like the old man somehow knowing how to act on camera and trying to be hip.
    Zhongli: Hello little friends! Today we were asked to make my specialty dish, my "Slow Cooked Bamboo Shoot Soup"..... However since it is "Slow Cooked" I took the liberty of making it and cooking it in advance, unfortunately that means at this moment in time there is no footage of me making the food, however I asked many artists of the Kam-era industry to take notes through the time...
    * Insert Old clips that looks like they are in different time eras, one including Zhongli with an Afro and Disco gettup *
    Zhongli: I can however tell you where I got the ingredients from.. First off, Bamboo Shoots, one day I was taking a nice walk when I noticed a new strange plant suddenly growing from the ground, and much like a human WHICH I AM OF COURSE I wondered if I could eat it......
    And so on and so on for that animation script idea XD

    I made this dish using beef chuck instead because i like the beef flavor with bamboo shoots. Also instead of spring onions i used lemon grass. My roommates ate half of the pot before i had any.

      I learned that uneven distribution of a taste (such as the umami of meat) amplifies its effect even greater than creating a uniform distribution.

    Wow! Amazing~!
    The original version of this dish is called 腌笃鲜 (Simply translated as Cured Pork + Slow cooked = Delicious). A very famous recipe from Shanghai.
    My grandparents used to cook this a lot in winter days. A bowl of rice, warm soup, crunchy bamboo shoots, tasty pork, also with some other dishes like Spring Rolls, Crispy smoked fish, Stir-fried Cabbage and Mapo Tofu. This soup is not only a dish for me, it's my childhood memory.
    One small difference between Zhongli's version and the original 腌笃鲜 btw. We actually put a lot of fresh pork belly or most likely chopped ribs in soup, but only a few slices or pieces of cured pork, just for seasoning. (Cured pork have strong and unique flavor, that's why this soup got its name, but not too much : p)

      yessss my grandma still makes them now and uses the dried soy sauce cured pork she makes herself! We would use the left over cured pork to cook vegetables to add flavour like 3 thin long slices of the cured pork can last a good winter. The soup is so good when mixed with rice🤤istg i need to learn to make this from her coz shes the only one in our family who knows how to make it smh

      It's one of only a handful of words that I know how to say in Shanghainese because my dad is Shanghainese but he never speaks Shanghainese at home so I never picked the dialect up. But he ALWAYS says 腌笃鲜 in Shanghainese, haha.

    For the orange peels, I suggest 陈皮, which is orange peels that is sun-dried for a long time, years even. That way, the fragrance will be better, but still, Mori Kitchen is the Archon of food.
