Scrambled Egg Tofu

  • Ingredients
    1 x 300g block Tofu (Tonzu)
    2 Tbsp oil (without a strong flavour)
    1 Onion - finely chopped
    1/2 tsp ground Turmeric
    1/3 cup Plant-based milk
    2 tsp Vegan butter
    1/2 tsp salt
    1/2 tsp Massels chicken stock
    Parsley/chives to garnish
    Method
    Drain the tofu and then crumble it up with your hands and set aside.
    Heat the oil in a frying pan and fry the onion until soft. Add the turmeric and cook for another minute.
    Add the tofu, milk, butter, salt and chicken stock and cook for another few minutes until the milk is mostly evaporated. Taste and adjust the seasonings accordingly.
    Serve immediately on hot toast and garnish with the parsley and chives. Top with a slice of tomato/avocado and a drizzle of tomato pasta sauce.
