    for some reason i remembered chef john today and decided to check in. just had a huge nostalgia coming back to me. i watched foodwishes since the strawberry pavlova video 8 years ago and i was 13 and i was still living back home. im 21 now and it made my day at how chef john is still active. more power to your chef! 🙏

    This video really helped me make the best EVER! I made it for my sons birthday party and my entire family loved it. It was completely gone by the end. My aunt (who is known for her baked ziti) said it was the best ziti she ever had in her life! And she’s already requesting that I make her another one. What a compliment! Thank you kind sir!!

    Very similar to mine! I am Italian American, and I always mixed mozzarella with ricotta, even for my lasagne, manicotti, and stuffed shells. The only difference is I mix one egg, salt, pepper and parsley with my ricotta, then mix in the cubed mozzarella, and dollop on the pasta. I also prefer just to flavor my sauce with the hot Italian sausage links, remove the links after the sauce is cooked, and serve them separately, rather than add the sausage meat in my sauce.

    Baked Ziti was one of the most popular meals at pretty much every firehouse I ever worked in. It was one of the first dishes I learned how to cook when I was a probationary firefighter 30 years ago. I still love it.

    I made this last week when my family arrived for Christmas. I followed the recipe almost exactly, just using mostly spicy sausage. Used Barilla Marinara sauce because it was on sale. It came out wonderfully. Served with some fresh baked rolls and everyone was raving. It makes a very large amount too, and my husband is thrilled with the hearty leftovers he takes for lunch. Will be a go-to meal for me anytime I am cooking for 4+ hungry people! Thank you!

      Should consider giving Del Grosso (Pennsylvania based company) sauce a try. I especially like the tomato basil blend. Inexpensive, and delicious. I learned of them after they donated to a spaghetti benefit dinner for a friend. Good company, gives back to the community 👍🏻

    Spent election night (and morning) making bulk amounts of Chef John's Tomato Sauce recipe and then using the sauce to make 6 trays of his Baked Zitis. Best ziti I've ever had! I subbed mild sausage for most of the hot to make it palatable to my kids, because I'm the Nefertiti of my baked ziti. Thanks, Chef John!

      @Peggy Smulligan I was in Kroger yesterday. By chance I was in the tomato sauce aisle.
      Rao's was $7.00 a jar.
      I said to myself "That's a NO"
      I don't mind a jar sauce if it's good although I make my own from my garden I can each summer. At $7.00 I think that's ridiculous.

    My Dad was a chef and his style was a lot like yours. He used to make a baked ziti full of mushrooms, onions, peppers, sausage and ground beef. He also placed cheese similar to yours! Thank you so much!

    Hello Chef John. I married an Italian young man years ago...44 years ago. In our early years I watched his mom and aunts cook. There are so many dishes that I've mastered, if I say so myself. It's fun knowing that my husband appreciates my cooking. This recipe sounds yummy. I'll add it to my collection of great recipes.

    Queens. 1967. Ziti so good I wanted to add a vowel to the end of my name and wash dishes and bus tables just to be near that stuff. I suspect this version may even surpass that.

    Chef John, I’ve been watching your videos for a few years now and I’m proud to say (although it’s a simple recipe) I could “predict” all the procedure and the tricks you used to avoid potential problems or at least to make this better than average - rinsing the jars, undercooking pasta, mixing pasta and sauce to allow pasta to absorb some sauce and of course that you’ll make a mess :P

    Just reserve around a cup of the sauce to go on top, saving all that stuff about straining it a bit as you ladle it into the dish.

      He tried it -- it wasnt for him. People shouldnt beat themselves up about eating meat. I hate those preachy Vegans trying to make us feel guilty!

      @@annother3350 My husband is the one who started our family on the vegan journey. No preachy vegan here, but it is hard to start thinking about eating animal products again after not doing so for 3+ years. No one is making anyone feel bad about eating meat or animal products for that matter. Just trying to be humorous, nothing more to it. My husband said starting in January we would start adding certain foods back, but the more he keeps watching this channel, that is getting thrown out the window...🤷‍♀️😊🤣😅

      @@laurachapman3157 I wasnt pointing the finger at you guys Laura -- you're not even Vegan. The internet however is full of vegan preachers trying to convert people. I've tried veganism and it doesnt work for me so I wont feel guilty every mealtime! Just tell your husband he doesnt need to feel guilty.

He is fine, it's me that is having that weird feeling in my tummy. 😔🤷‍♀️ After watching What The Health, it definitely made me look at everything differently. I'm sure it will get easier overtime though.

      @@laurachapman3157 I'm sure some people feel a lot of torment. My french friend was vegetarian for decades and then one day she caved in and ravaged a steak. Now she only tries to buy what she terms 'happy meat' -- she tries to make sure the meat she buys has had a good life so that she no longer feels bad about eating it!

    Most cheeses sold grated in a package contain anti-caking agent so they have problem melting.
    It's usually a bad idea to use them in recipes that require to melt them.

      You're right, but it also depends where you live. I've done a lot of comparisons of ingredients of common items sold in both UK/US recently and it's amazing how different some are. Unscientific study from hitting the first relevent items I see on a couple of websites...
      Grated Mozzarella:
      From Walmart (US) - Ingredients: Reduced Fat Mozzarella Cheese (Pasteurized Part-Skim Milk, Cheese Culture, Salt, Enzymes, Vitamin A Palmitate), Calcium Sulfate, Potato Starch and Cellulose Powder Added to Prevent Caking, Natamycin (a Natural Mold Inhibitor).
      From Asda (Walmart owned company in UK) - Mozzarella Cheese (from Milk), Potato Starch
      I wouldn't buy pre-grated anyway, Mozzarella is one of the easiest cheeses to make at home.
      Potato starch is something I often use as a thickener for sauces instead of cornflour (aka corn starch), but gypsum (CaSO4) and cellulose? No thanks! Natamycin doesn't sound fun either, fermented bacteria. Yum. Shelf life I guess.
      Tldr; just don't buy ready grated cheese. And make Mozzarella at least once in your life, you'll be amazed with what you made yourself in less than an hour.

      I don't know anything about food in US, never had contact with it.
      I guess it might also depend on the price of the product.
      I think also that food on continent is better than in UK.
      The food I ate in Netherlands, even though cheap, was better than that in UK.

    Thanks chef! Tried this last night and it was marvellous! I used Cumberland sausages as I couldn’t find Italian and replaced the marinara sauce with tomatoes and minced garlic. Never enjoyed “pasta bake” style dishes, but this had all the richness and decadence of a well made lasagne, will be eating again!!

    Forgive me Chef, but I need to correct you on this one... Always melt your ricotta into the sauce, as this prevents it from forming that dreaded grainy texture. For best results, divide sauce in half and add the ricotta to one half of the sauce, for that layered flavor.
