Very comprehensive review! I have the Gem Red version, looks to be identical to yours. It's a really great tool and having it in the workshop is well worth it. That being said, I probably only use it once or twice a year! lol. Same goes for my digital angle box, very rarely use that but I don't regret buying it.
No volume issues at all. Obviously not superstar recording equipment but definitely loud enough and more than clear enough to suffice. Maybe you could try sign language or something for your deaf watchers.
LOL, I do sometimes upload subtitles, but as a small channel with unscripted content, it takes ages, and I really don't have enough subs to warrant the enormous effort required vs youtubes own transcription.
