COCONUT FAT WASH RECIPE
4 oz Plantation 3 Stars Rum
4 oz Plantation Original Dark Rum
2 oz Melted coconut oil
1- Pour the melted oil over the rum. Close the container and let infuse at room temperature for 2 hours.
2- Place in the freezer until the fat is solid.
3- Poke holes in the fat and fine strain
How to make Coconut rum Old Fashioned AKA The Tradwinds Old Fashioned
2 oz Coconut washed rum
1 tsp Apricot liqueur
1/2 tsp Demerara gum syrup
2 Dashes Angostura bitters
Lime zest

Amazing cocktail! I love coconut-washed rum 🤩 I usually turn the jar upside down into the freezer so I don't need to poke the hole before pouring it out. Maybe someone will found that useful.

Holy moly! I just found that one, tried it and what can I say?! OUTSTANDING!!!! I've used it in a rum old fashioned and added some vanilla to it. Easy peasy but a we'll balanced drink, even after it sits for a while. Thank you for that input! 🙌

Coconut oils and rum are a match made in heaven, my palate was screaming in jealousy as you took that first sip! Experimented with coconut fat washing some bitter liqueurs recently, Aperol was the winner interestingly, Campari a close second.

can you use the oil/fat multiple times or does it loose the flavor?
Another way is to freeze it upside down. The fats will solidify on the bottom making it easier to pour the utter deliciousness out of the jar without having to break the puck.

Brother, I love you. I love making your drinks. But really... it's Friday afternoon and I want something NOW. I don't even know where to get Apricot liqueur, or spend time finding the coconut oil. No time for fat washing today. But I wanted something loosely (ok, very loosely) in the same taste profile. 1-1/2 oz of El Dorado 12 Year, 1/2 oz of Clement Coconut Rhum, 2 dashes angostura bitters, 1 dash orange bitters, and a little simple syrup (about 1/3 oz... I am just so used to squirting it into the glass I didn't measure it). Thanks for the inspiration. (P.S. sorry I had to post this twice. The first time it wiped out the second half because I put in the accent mark on Clement.)

I just had an amazing twist on an old fashioned this weekend in Louisville, KY - where we visited some amazing bourbon distilleries :) I got to try Angel's Envy Rye and it was amazing! That was the most I have spent on a single bottle so far but well worth it for a treat.
Here is the amazing smokey, campfire in a glass.
I need to experiment to figure out the proportions:
Smoke Rings by Proof on Main, Louisville, KY
Bourbon infused with Lapsang Souchong Tea (my guess 2oz)
Ramazotti Amaro (guess: 0.5 oz)
Dry Curacao (guess: 0.5 oz)
Absinthe (Rinse?)
Flamed Orange Zest garnish

Infuse longer may result in stronger flavour. Freezing longer won't change anything. The freezing is only there to solidify the fat. Cheers!

I'm totally not an expert, but I was wondering if you could in any way use olive oil to fatwash alcohol? And if so, what could be paired with it? Maybe gin?
yes Olive oil washed spirit is a thing. Gin or aquavit are great spirit to do so. A gin sour with olive oil wahed gin is extremely delicious!
It’d be interesting to compare fat washing with coconut oil against steeping with desiccated coconut, and then to mix it up compare toasted and untoasted desiccated coconut
It is indeed a good experiment I’m sure. I think the fat wash has a lot to offer and build the flavour faster which i like. But yeah chunks of coconut might achieve a similar flavour but different mouthfeel.

How did the spirit come out clear? I’ve tried coconut washing a whiskey and find even after freezing and straining through a cheesecloth it is still cloudy.
Is it because I shook it before freezing and didn’t strain through the block?
Maybe you didn’t leave it resting long enough before freezing it. The fat needs to separate at room temp before you freeze it.
